Save your time and just go down to Mansfield or Baffin, but mainly Mansfield.
You can catch monsters in a lot of areas, but those 2 areas make your chances much much higher. Also, if you are going to fish for bigguns, your guide will have you fish for big trout looking for one bight. He wont go chasing numbers unless you tell him to. So, you have to be content with maybe only catching a few trout or maybe no trout. I fished Baffin with Cliff Webb a few weeks ago and it was a slow grind. Wind was howling. Was supposed to fish the next day with Wyatt Foster who just won the second leg of the Legends series 2 days before, and we didn't even go out the next day because of the wind. The wind is what will kill you down south. Like TWF said, a lot of guides are going to book at 5 day window and fish 3 days due to the wind.
ETA: Just saw you are bringing your own boat. Best of luck to ya. Scratch Baffin and Mansfield off the list. You will not have the draft for Mansfield and the rocks will destroy your boat in Baffin if you don’t know where you are going. There are also some really shallow areas in the Laguna madre you will get stuck on if you don’t know how to navigate. If you’ve never fished down south, get a guide the first half dozen times or so before you even think about going at it yourself. They have a bunch of the worlds best truchadors down there.

Matagorda is still home for Brett, he along with a bunch of others go to Mansfield from December until usually around April. Their clientele in the winter book with them for one thing, big trout. Matagorda and Rockport have not recovered from the freeze like Mansfield has so they are going where the big ones are.

We used to fish West Matagorda Bay in a 16’ center console. It’s not the length, it’s the draft you need to be worried about (that’s what she said) down south. Hence, the comments about get a guide on day one and even tell him what you are doing. A lot will show you places and give you tips on how to navigate the area.

I finally figured out how to and where to catch trout down here a few months ago. I just cant catch any big ones. Keepers are not easy to catch in numbers. There are a few big ones here, 20-25" but nothing like you guys have over there

We have a lot of mangroves here and they stay around them most of the time. Shallow like redfish. We have a few reds here that hang with them. They also group up on the beaches and can be caught early. I do most of my damage on live bait, (Whitebait) that I net around grass and bridges. ''
I also do OK on swimsuits, topwater and a few plastic bottom baits.
The mangroves are carnivores. They like a hard bottom. Small ones are inshore and larger ones are off with the grouper and other bottom fish.
