Thanks for the update but I've been on it like white on rice. So far, my strategy is working out.
I did move my trip to early July to give this spike some room to run, but I'm feeling good about it. I won't move it again unless I'm banned or flight gets canceled.
Croatian tourist office in NYC said the CDC card should be fine but I'll email their border patrol too.

Pre-paid reservation is a lot to ask; flexibility in hotel reservations is huge in general much less during a pandemic for international travel. Glad Greece and Croatia are taking swings at opening up, though.

Ya, some have stated the hotels will send you something that will work without prepayment.
Some have said border patrol's enforcement of that is iffy at best.
If the hotel won't send me something that will work without prepayment, I may wait until right before departure to run the credit card. Or alternatively, book a hostel for $20 a night as insurance

You have 3 options:
1) Negative test taken within 48 hours before crossing border. They now accept approved rapid tests so this isn't as hard as it was.
2) proof of recovery within 6 months before entry, but no closer than 11 days before entry.
3) vaccination, where last shot was 14 days before entry.
There's another option where you land, test, and isolate until results come back, but I wouldn't want to try to convince an airline employee that's an option.
You must also have proof of paid accomodation.

Ya, if you use the Antigen rapid test to enter Croatia then you need to retest again by 10 days in.
FYI they have hospitals and public health centers that offer rapid and PCR tests but are planning to put more rapid test sites in tourist areas for the season.
Like most destinations I plan on traveling to, I read the local news almost every day. Need to pick up a book on the Balkans war.

Let me set out another pitfall to avoid. If you fly via Europe you are likely to still need a PCR test because those countries require even transiting passengers to have a negative test.
I'm flying via Istanbul both ways to avoid that issue. If you plan on entering Turkey you will need a PCR test as of today. I'll probably spend 1.5 days in Istanbul to take my wife around so I'll need one anyway

What was thinking of going through Istanbul vs. a European Gateway (say connecting through Amsterdam like we did a few years ago?).
Vaccination. If you had them, so that's all you'd need. Just the card they gave you is your proof you take with you like your passport?

Number of reasons for Istanbul.
1) Turkish Air has a more stable flight schedule. Trump banned Schengen area citizens from traveling to US and that remains today. Therefore, airlines located in those countries have drastically reduced schedules and less reliable future schedules. Some haven't flown certain routes in over a year now.
2) There's a technical difference between entering a country and transiting an airport located in that country without going through border patrol. However, in Europe, the big hubs like AMS and Frankfurt are requiring testing to transit, so even if the ultimate destination (Croatia) doesn't require a test, you'd still need it before you will be allowed to board your US/Europe flight. Turkey/Istanbul doesn't require any test to merely transit the airport.
According to the emails I've sent, Croatia will accept the US CDC card and that's all you need for them. However, I'm monitoring various message boards and chat rooms waiting on a US citizen to report doing that.
All persons returning to the US regardless of country of origin need a negative test within 72 hours of departure. It can be a PCR or antigen test.
So even if you fly via IST (don't enter Turkey), transit to Croatia, you will need a negative test before the US bound flight back home.

Wanted to clarify something about the 10 day Antigen test. You only have to report a positive. There's no need to officially declare you're negative to anyone.
