5 nights (Sat-Thurs), family vacation, 4 people. I would like to stay below $1200 for all 5 nights. I’ve found plenty, and if you look at their websites, they all look like 5-Star hotels, which I know is not true.
Doing the tourist stuff, so want to be in the middle of it all.

My daughter and I stayed at this Hilton Garden Inn
Might be a little over what you wish to spend .. I didn't log in under my Hilton account to get better pricing. It wasn't fancy but it was clean and we had no issues. We were there in July 2016 and February 2017 so it's been a minute.
Stayed there twice ... close to everything we wanted/needed. There was a little grocery/deli across the street that was like a local south Louisiana type store. Fire station down the street but it didn't cause noise issues for us.
I LOVE NYC ... not sure if we'll go back given all of the safety issues. I never felt unsafe and it was just me and her (I'm the mom).

Looks like you can get a 2 Queen room at the Courtyard at 40th/5th for $240/night for those dates. That's pretty close to all of the Midtown stuff you'd want to do and an easy subway ride if you want to head to WTC etc. The Tribeca Sheraton usually has decent rates as well.

NYC hotels are definitely cheap right now, because normally, most of NYC hotel rooms are occupied with business travelers, and business travel hasn't really begun to recover yet. Note that NYC hotel rooms are notoriously small, as the real estate is just too pricy to make normal rooms very big.
I was just in NYC this past Thursday - Saturday. Personally, I prefer to stay in Midtown Manhattan. First of all, if I fly in to EWR or JFK, then the fastest way to get to Manhattan is by train, arriving at Penn Station. I like just getting off the train and walking a couple of blocks to my hotel instead of getting a taxi or Uber, and it makes getting in and getting out of town faster (obviously, this reason doesn't apply if you are flying into LGA).
If you stay in Midtown near Penn Station, there are definitely attractions in easy walking distance. I always eat a meal or two in Koreatown, the Empire State Building is there, and there's tons of shopping, from the giant original Macy's to the high-end mall at Hudson Yards. From Hudson Yards, you can walk the High Line to Little Island, which just opened a couple of weeks ago.
So, that's my preference, but I know that lots of others would tell you to stay a little further north by Times Square, where you're by Rockefeller Plaza, Central Park, and all the theaters for Broadway plays. You're also closer to some of the most popular museums, such as the Metropolitan Museum of art and the Natural History museum from the "Night at the Museum" movie.
I think that staying downtown is usually thought of as being more for business travelers, but you're closer there to the 9/11 Memorial and Freedom Tower, as well as the ferries to Ellis Island and the Statue of Liberty.
The subway is cheap and the system isn't too hard, so you can get from one area to another without difficulty. Sometimes, the Citi bikes are also a good idea, for those distances in between walking and taking the subway.
I'm sure your family will have a great time.

Le Meridien
Has a pool, near it all and has the hidden burger joint in it. Not sure if it closed
