Plenty of reviews on these areas you can search on this site.
Brevard NC is our "go to place". Tons of hiking, waterfalls, plus some nice shops, restaurants. Near Pisgah and DuPont National Forests.
We also travel often to stay near Blue Ridge GA. Probably just as much. Proximity to Ellijay, Dahlonega. Maybe consider staying at the Lodge At Amicalola Falls State Park?
Highlands and Cashiers NC are magical if you can find a place you like and can afford. Really "high end type" mountain towns with lots of people coming there.

I don't think you can go wrong in that entire area. I'm not as familiar with north Georgia, though I've been to Blue Ridge. It's okay, but I prefer the NC towns - Highlands, Cashiers, Sylva, Brevard, Bryson City. As much as I like Highlands, I will say it's not really geared towards kids. Not that they're frowned upon there or there's nothing there for them, but it is a bit of a pretentious place with a LOT of wealthy people living there and with second homes there. But things kids would enjoy are nearby.
I think that time of year a suitable house for your family's needs is more important than the town you end up in. There is the chance of getting snowed or iced in for a day and being in a house that has a view, or lots of games/puzzles, good TV's, nice fireplace, etc. would be worth it.

Just all depends what you are looking for. if you want to go out to eat and shop, it is. If you want to go out maybe once or twice the Highlands, cashiers, etc.. are better. like spleen stated, its a higher end crowd, but also quieter . Has a lot of golf as well. There arent really many grocery stores near highlands/cashiers so be prepared with your planning

Cashier's does have a nice Ingle's, and that's all it really needs. The grocery store in Highland's(Bryson's) is pretty expensive though, and it's small. Not really a place to shop for a family for a whole week, so definitely plan ahead if you head there. There's a Walmart and Ingles in Clayton, GA, just before heading up the mountain to Highlands, if you come in from Atlanta.

I live in Bryson City. Bryson is amazing around Christmas. The Great Smoky Mountain Railway runs a Polar Express trip that I recommend everyone do if you have kids. It’s truly a unique experience. The town becomes a Christmas village and everyone decorates. You won’t be disappointed at all. There is a very good chance you’ll get snow as well.

While it was never for Christmas, we have always enjoyed getting a cabin in the Blood Mountains in Georgia. Dahlonega is beautiful town with a great scene, and there are others around it. If doing North Georgia, Helen is a Bavarian town that goes all out for Christmas. Just know it is a tourist town so be prepared to pay more for stuff in that town.

You’re thinking of Mountain Layers. I prefer Nantahala Brewery in the winter, but this is a great place also.

Just some different Air BNB's we are coming across....
Bryson may be the "simple" route we were looking for... still looking but we'll narrow it down sometime this week and given the chatta about being possibly snowed or iced in the cabin we may just focus on simple and not over plan too much.

We stayed in a tiny house on a horse farm from Friday to Monday the weekend before Christmas. They’ve got a nice live theater where we watched A Christmas Story—it was fantastic. Bounced around several wineries. The town square was decorated for Christmas and had a big festival on Saturday. Our favorite bar was shenanigans. We drove over to Helen one day but I probably wouldn’t do that again—it was very touristy. It was a great short trip

My dad has a cabin on sugar mountain, love the area. Only done a couple weeks during the summer, each of the last 2 years. Yet to winter visit, no 4wd

Looks like it’s narrowing down to blue ridge…
We didn’t have a chance to book what we wanted in NC so started looking again and came across 2 really great places in Blue Ridge…
If anyone has Recs on places to eat/hiking trails etc pass along…also any great pit stops along the way from South LA to north GA

No experience with N. GA but my parents almost built in Sapphire Valley. With them getting older they opted for Hendersonville/Flat Rock instead but we still love the area.

I grew up in the area and I think pretty highly of it. If your priority is mountain cabin views I would recommend Bryson City (has a cute downtown and really close to smokies), Cashiers (literally on the continental divide, not a ton up there as it's mostly a 3rd and 4th home community with golfing resorts but gorgeous views), Brevard (close to asheville with awesome views and some pretty great beer), Sylva (really cool mainstreet with 3-4 cool breweries and cocktail bars, pretty good mountain views, in the middle of a lot of stuff e.g., Cherokee, skiing, Asheville, etc). Any of those places have tons of access to hiking. I definitely recommend hiking up in the Smokies, check out Waterrock knob, Max Patch, Graveyard fields, Gorges State Park, Panthertown Valley. Biltmore house is for sure worth a visit.
If you drink beer you should visit a few of the local breweries - Burial (Asheville), Dssolvr (Asheville), Highland (Asheville), Oskar Blues (Brevard), New Belgium (Asheville), Highland (Asheville), Innovation (Dillsboro).
If you want some good food while you're around, you mostly can't go wrong in Asheville with restaurants but some must trys are Buxton Hall, Biscuithead, Sunny Pointe Cafe, Curate, Limone, The original Tupelo Honey, The Forestry Camp, 12 Bones, Haywood Smokehouse.
If you drink beer you should visit a few of the local breweries - Burial (Asheville), Dssolvr (Asheville), Highland (Asheville), Oskar Blues (Brevard), New Belgium (Asheville), Highland (Asheville), Innovation (Dillsboro).

We ended up in Blue Ridge, GA.
Actually our cabin was on the GA/NC border.. but Blue Ridge was 20 min down the mountain. Murphy, NC was about the same distance.
This is definitely a hidden gem to most, as I always see/hear people constantly going to Gatlinburg or Pigeon Forge (guilty as charged as we have been multiple times in the past), but Blue Ridge and North GA is amazing! Its not as crowded and you have so many things to do. We enjoyed all of the hiking, waterfalls, mountains, vineyards, and orchards in the area.
The downtowns these towns have are great! Really nice to be able to walk these towns and see everything they have to offer vs going into all these big cities and spending crazy amounts of money for touristy type things.
The weather was great while we were there (vs South LA summer/winter)...
I'd recommend to anyone going for christmas, but could imagine the Fall being one of the best times to go (Octoberfest), and also summer time by getting to go down into the water and also the lakes nearby.
Definitely a hidden gem only 2 hours north of ATL.
