Scratch Eugene.
Unless you are there for Olympic Track qualifications or a college football or basketball game, do not waste planning time around Eugene other than to visit a few breweries. Breweries are all over Oregon, so totally skip Eugene.

I agree. I'd skip Eugene. Eugene and Salem aren't anything special. Portland either, really.

That's how I feel about Crater Lake. July would be the perfect month to go and not have to worry about some of the roads and trails being closed due to snow.
If they stay in Bend for a night or two, it would be easy to hit both.

Newberry and Smith Rock State Park would be easy to hit on a day spent in and around Bend. Crater Lake and the Painted Hills are about 90 minutes outside of town but the Painted Hills are out in the middle of nowhere, so I'd probably skip hitting there.
If the West side of the Cascades is a must for the trip. I'd spend a day or two in Bend, hit Crater Lake and cross the Cascades at the Wiilamette Pass or hit the Timberline Lodge crossing Santium. If going the latter route, I'd probably try to spend a day in Sisters.

I've never understood the appeal
Again, it's all a lot to see in 5 days.
Sounds like the coast is happening so I'd do Central Oregon/Crater lake another time otherwise the trip will all be spent in the car.

At least when the catalytic converter on the car gets stolen in Portland(happened to my brother at his hotel there a couple of weeks ago), the car will be a rental.

Update:
Thanks for all the suggestions. Wife’s bday and her plans were paramount for this trip…
Spent our first 2 days at Cannon beach resort. Spas and wine and Oregon coast. Our first flight in from Nola got canceled when we woke up at 4am, and it screwed up our arrival and an entire day. Did a couple days along the coast, pelican brewery, pigs n pancakes breakfast, half day in Astoria.
2 full days of wineries in Willamette. Bed and breakfast stay. ETA: our favorite top notch wineries for both wine and views… Colene Clemens, White Rose, Alexana, Purple Hands…
Another couple days spent in Hood River area, Mt Hood, Trillium Lake, Timberline Lodge.
Feels like we just scratched the surface. Oregon was pretty awesome. I missed out on a ton of stuff I wanted to experience, but this wasn’t my trip and birthday.
We lost a full day that I was hoping to add Crater Lake or Silver Falls (Trail of 10 Falls).

I hope you visited the on in Pacific City, and not Cannon Beach. Cannon Beach is okay, but Pacific City (1/2 hour south) is magnificent. Also, the view from Ecola State Park in Cannon Beach is one of the greatest views you will ever see.
The Hood River area is beautiful and one of the most beautiful views is from the Washington side looking across the Columbia River at the town of Hood River. Mt Hood is the backdrop and it is amazing. You can't see Mt Hood from downtown Hood River because of the hills/trees in the way.

You missed the coast of southern Oregon, Crater Lake, Bend, the Wallowa Mountains (aka The Alps of Oregon), The Sisters, Crater Lake, the high prairie, the painted Hills, Multnomah Falls (didn't mention, at any rate), Mt Bachelor, Florence, Newport, Silver Falls, Ashland, Medford, floating the Deschutes River, and Blue Star Donuts...
Other than that, you did a good job covering it.
