We didn’t even go to a Disney park because they were all sold out.
Why would you stay on Disney property then ? I thought there were nicer and cheaper options outside the gates

I didn't, but if that's the worst area of Orlando, then they're doing alright. I didn't think it was that bad of an area, but I've been to the depths of the Birmingham ghettos.

Orlando’s a very nice city. We got lost driving to our hotel while on a business trip and ended up exploring the city while looking for our hotel. This was pre smartphone days and our rental didn’t have a GPS

It's a bland post-war city lacking any distinct culture of its own with a hot humid climate based entirely around expensive theme park resorts. There's clearly a very specific appeal to Orlando, but if theme parks aren't your bag, then it doesn't really have much else going for it.
When I travel somewhere, I'm usually looking for:
1. Beautiful natural scenery (especially mountains or beaches)
2. beautiful architecture (especially pre-automobile dense urban architecture) and walkability (if a city)
3. Weather different from my home in South Louisiana (when it's cold and rainy, I want warm and dry. When it's hot and muggy, I want mild and dry or cold and snowy.)
4. Live original music
5. Excellent food
Orlando has no mountains or beaches. Its architecture is nothing to write home about, and it's certainly not walkable as the city was largely built post-automobile. Orlando's climate is pretty similar to Baton Rouge, so it's rare that I can "escape" a weather condition in BR by going to Orlando. Orlando isn't known for its local music scene, but the resorts do pull in some excellent concerts by national touring acts. Orlando isn't known for its food either, though I'm sure with that much money flowing through it that there's some decent fine dining somewhere in the area.
I just don't prefer Orlando because it's not what I'm usually looking for in a vacation destination.
Asheville, Denver, Destin, Miami, San Diego, Denver, Phoenix, San Francisco, Seattle, Portland, Chicago, Austin, Nashville, etc all offer more of what I'm looking for.
I would pick Orlando any day over Houston/Dallas/Atlanta.

Orlando is actually kind of a newer city. Downtown is very walkable.. not sure what you mean by that

That's cool. I couldn't imagine booking a resort on Disney property then not go to the park. They have really nice off property resort like the Gaylord that are comparable to moderate on property hotels but are better than deluxe.
Unless it's a Bonnet Creek area resort. Then those you can sometimes get cheap AF or free for listening to a high pressure sales demonstration.

If you want a serious answer
It's an extremely over leveraged city with tons of transplants. It has no sense of place or meaningful history/culture, it's got plenty of ugly and ghetto parts, outside of the parks dining and nightlife are either douchey or cliche, parents are vapid, kids are directionless, etc. etc. etc. It also has one of the worst airports in the country IMO. In sum, central Florida is often disparaged as one of the more soulless parts of the country and arguably Orlando is the capital of that.
And that's without weighing in on the parks. The parks themselves, in my opinion, are fine/good/whatever. The people who obsess about them and would rather take their kids to Paris in Epcot than actual Paris for the same money are weird and emblematic of cheap attention grabbing stimulation that drives our cultural rot. Disney obsession is now it's own social currency, with suburban moms trying to one up each other by where they stay or how often they go. It's a bizarre middleclassfancy subculture right now.
