Where should my wife and I go on our next overseas trip?

Our last international trip was in 2015 to Italy. Since then with three kids and COVID we just haven’t had a chance, but may finally get a window during the kids preschool spring break this April. We like history, good food, nice scenery, and friendly people. I hate big cities and traffic so getting a bit off the beaten path is another must. With those criteria in mind and a 10 day trip window, where would you go? Italy again? Iceland? Greece? Somewhere else? Thanks.

If you're looking in the next 6ish months I'd consider Turkey or Greece.

You can always go to France, Spain (Asturias. Bilbao. San Sebastian.) or Italy (Obviously Florence). Great locations. How about something unique and different?
Slovenia (Any place prettier than Lake Bled? Why yes there is believe it or not. Selected photos from our 2018 Trip.)
History? Slovenia gained its independence from Yugoslavia in June 1991. First country to do it. Well organized with minimal casualties. Going back, Google Kobarid. Tour the "Forgotten Front". Known for the 1917 Battle of Caporetto, where the Italian retreat was documented by Ernest Hemingway in his novel A Farewell to Arms. Battle of Caporetto. Italian casualties at Caporetto totaled almost 700,000.
Wine? Slovenia put the W in Wine! Wine Tourism.
Regions.
Czech Republic (Just got back. Prague is magical. Google Ceský Krumlov. If that doesn't do it, don't know what would. Selected photos / December 2021.)
History? Recent. You may even remember some. The Prague Spring of 1968, was another rebellion caused by discontent with Soviet policies.
Wine? Moravia! The wine region around the town is called Mikulovská, and it is one of four wine regions in southern Moravia. NEVER had a bad wine while there. Regions.

New Zealand
Not really an option as we only have 10 days, and aren't the COVID restrictions ridiculous there? Like don't you have to quarantine in a hotel for two weeks if you aren't a New Zealand citizen?

New Zealand is supposed to reopen the border April 30, 2022, but I will believe that when I see it.
