Trip recs with young kids

We have 2 kids less than 5. Trying to figure out some trips with them. Looking for a mix of what we would and enjoy and they would enjoy. For examples, in the last year, we have been to Breckenridge, NYC, Disney, Great Wolf Lodge with the kids.
I prefer to avoid theme parks. Travel distance is not a huge concern, but will stay in the States for now.
I'm looking at Big Cedar Lodge, but I can't decide how much younger kids would have to do. I also can't figure out how many nights to stay if we did that.
Any other ideas?

Big Cedar is cool if you like the outdoors. I'd also suggest Western NC (Asheville area).

If your kids are into the water, Discovery Cove in Orlando was a lot of fun. I don’t like the water and don’t like the beach but even I enjoyed it. I know you said no theme parks and I guess it is considered a theme park but really isn’t like your average theme park.

Crazy I was about to start this same thread. We’re looking for somewhere low humidity in August we can go with our 2 and 4 year old.
Trip isn’t for them, but want to go somewhere my wife and I can still enjoy with them

San Diego is pretty fun. Tons of breweries for you. The zoo, safari park, seaworld for them

If you live around BR, the Oasis in Gulfport is actually amazing.
Nice rooms, big compound, tons of water and a splash pad the size of a football field. Swim up bar, MS Aquarium next door, huge arcade down the road at Margaritaville, great food options and travel time is a breeze.
We went for a three-day weekend and will be going back regularly
