Ideas for trip to CA between Santa Barbara and Big Sur

Looking for ideas. Gonna do Hearst Castle, Paso Robles wineries, and hiking. Going in Dec-Jan time frame. Any input welcome.

I went to Paso Robles before the ucla game last year I started a thread about it before the trip and got some great input and gave a short trip report about it after I got back. It may be helpful to you to look up that thread.

I remember San Luis Obispo beng a fun overnight stop. A big thing there is the farmers market, so if you are thinking about doing SLO time your stop around then.

Look up Glen Oaks in Big Sur. Rent a tiny cabin in Redwood Grove. It is pricey but awesome! Do a hike at Pfeiffer Big Sur State Park.

When we made this trip 2 years ago, they had bad rain storm that messed up portions of HWY 1.... so we could not take the trip up the coast from Paso to Monterrey. We Actually had to go up to Monterrey from Paso on the 101 then loop down into Carmel/Big Sur etc.
The furthest we went down was McWay Falls.
As far as recs. I would say 100% stop in Solvang. We stayed in Santa Barbara and made the drive into Solvang for breakfast. Then drove up to Paso from there to begin wine tasting. We had 4 different vineyards planned for that day then ended up spending the night in Paso. They have plenty of spots in Paso that you can look into and really can't go wrong. When we went we pretty much were on the GO the entire time and ended up staying at Hilton Properties, so nothing special but we also stayed in a different town each day so never just relaxed around the hotel. Was up before the sun somedays, and back after dark.
I would recommend The Hatch for dinner if yall are looking to wonder around downtown Paso. The alchemists' Garden for cocktails if you are looking for something different and a change of pace from the wine.
Vineyards we hit up
-DAOU (def hit this one up, on a Mountain overlooking everything)
-Halter Ranch (near DAOU, not as fancy)
-Brecon (more laid back of the 3)
All 3 are 5-10 min of each other. Easy to do if you are tasting and not "getting drunk".
From Paso you can cut across to Cambria on 46 and head up the coast on 1. The little bit of research I did on Morrow Bay and Pismo, they are beach towns you can def bypass if you want to spend more time in Big Sur (which I would def rec).
One of the most enjoyable trips I've ever been on, and cannot wait to go back.

Hike Romero Canyon in Montecito. You get above Oprah's house and have great views of the ocean.

Go to the Oceano Dunes outside of Pismo Beach. You can rent 4 wheelers and have a blast riding the dunes that overlook the ocean.

I’ll add a little onto this:
Madonna Inn in SLO for something… a little different. Get some 805 beer while in town too. I always enjoy Avila Beach for the snow cones and bike rentals.
For another place to stay check out the Cayucos Motel which is right next to Morro Bay. It’s right on the beach and isn’t a budget breaker. Pet friendly if you happen to have a pet with you.
There is a steakhouse in Buellton, The Hitching Post 2 that should be worth a stop. It’s just up the road from Solvang. Another steakhouse option is Jocko’s in Nipomo. Pismo and SLO has a good Italian place called Giuseppe’s (bone marrow is a winner if they still serve it) and there is a good cinnamon roll shop in Pismo too.

Check out Los Olivos, really cool little town that we stumbled upon during a road trip across California.
