I've made Chicken and Sausage Gumbo and usually I don't eat the day cooking it. You make the right Roux and it smells heavenly. The flavors meld together and intensify making it very flavorful the more you simmer it.

This is something I’ve always been curious about. Can anyone explain “flavors melding” when letting a gumbo sit in a fridge overnight? I understand simmering, but sitting in a fridge? What flavors and how does time in a fridge make them meld?

Does anyone have any facts to back this up besides just hearing it from others? I’m not discounting this, I’m genuinely interested in the science.

BigDropper, any info on this?

Here's part of a short article, but there are many out there.

"A scientific study has revealed that leftovers do indeed taste better.

The Harvard School of Public Health found that food continues to change its chemical makeup after it has been cooked.
Why does food taste better the next day?

Food develops new flavour molecules, and for us, that means it tastes better.
According to the study, proteins may further breakdown when the leftovers are reheated, producing new flavours which wouldn’t have been there when the food was freshly cooked.

Think of spaghetti bolognese. Or a pot of curry. Or even tiramisu. Spag bol always tastes better the next day, and curries become more intense. The flavours are enhanced as time passes by (which may explain why you don’t eat tiramisu straight away)."

Also, I don't believe gumbo needs to be simmered for a long time to get good flavor, but it depends somewhat on your procedure and whether you're adding raw meats. My meats are always cooked before adding because they are either smoked or fried. I saute the trinity in the roux prior to adding the roux to the stock. I simmer that about 30 minutes before adding the meats. Once the sausage is in, I simmer for 30 minutes.

I have this on my list of things to prove right after I get my final report done on "Water is Wet".

I'm also waiting to get started until I get my $1M grant to perform the study.

Let’s think about this in mathematics terms:

If the trinity = P
And the chicken and sausage = V

We will need to solve for fridge

So if P + V = F then the the cancellation will cause melding and result in two separate equations with a zero sum

A student brought this up a few years ago so I made them research it. Anytime they ask questions I don't have an immediate answer to, I task them to research the topic and report back to the class what they learned.

Essentially, proteins present in the food after it is cooked breakdown further when it is reheated. This produces new flavours which weren't present when the food was first cooked. Also, flavor compounds deteriorate and weaken overtime. This allows the taster to experience other flavors that may have been masked by predominant assertive flavors.

If you cook gumbo too long with the sausage in it the sausage breaks down too much IMO. I also like skimming that last bit of grease off the top when it solidifies when you refrigerate it. Gumbo is a cook a day in advance food for me, and there is something about the flavors that just doesn't taste the same right when it is done.
