What's y'all's recipe for the bites?
The new one I heard today was marinating yet in tiger sauce and then wrapping and bacon.

Dove breast, jalapeño and cream cheese wrapped in bacon is my go to. I enjoy it like that so I don’t venture off much.

I've done a few things-
Treated them like mini chicken fried steak bites and fried. - FANTASTIC
Seared like steaks in skillet- Good
But wrapped in bacon is the king.
I usually do about half of them with bacon, jalapeno, muenster, and half with bacon, pineapple, muenster.
Cream cheese is good too, but messier.
Just throw in smoker at 350-400 until crispy.

I went this past weekend with Duke Landry and when i asked him, he told me they make the best jambalaya. Wasn't expecting that but planning to cook one tonight to try it out.
You could wrap 2 year old freezer burned nutria in jalapeños, cream cheese and bacon, and it still be delicious so I wanted to try something new.

Saw a video from the meat church bbq guy where he grinds up the breast meat and mixes with some bacon, forms it into balls, and basically does smash burger sliders with them on some smaller buns. Add some caramelized onions, cheese, and a burger sauce, and you’re in business.
Looks pretty good and unique way to use them vs making into a popper like everybody else does.

Dove is probably my #1 wild game and is very versatile.
Some of my favorite uses..
Bacon wrapped poppers or course
Breast out, dredge in flour and deep fry
Fillet, pound flat, dredge in flour and deep fry.
Fillet, pound flat, pan fry and make a gravy
Fillet, pound flat and pan sear with some blacken seasoning (makes a killer salad topping)
Fillet, season with taco seaoning sear and make fajitas
Pluck whole and cook down in a gravy (I have a recipe in the F&D board recipe book called Dutch Oven doves).
Always pop the top and take the hearts. They are great fried or seared.
