Red beans and rice for 12?

I have a crew coming in tomorrow and have to cook red beans and rice for 12 adults. I rarely cook red beans and rice but when I do it’s just for my husband and myself and we get leftovers out of it. I’m struggling whether to go with 2lbs of beans or 3? I bought a 4lb bag of beans but don’t think I need them all. Got plenty of sausage. What would you do? Hopefully I have a big enough pot!

Cook the 4 lbs. and freeze the leftovers for eating later and not having to cook beans for 3+ hours again.

I will do this a few times a year to have quart bags on hand and it's just 3 of us right now.

At some point, you just have to be an adult and decide. If your pot can hold 3, cook 3. If not, cook 2. If you cook 2, you may be low. If you cook 3, you won’t be.

Cook 4 lbs. 5 lbs of sausage and 2 lbs of pork. Boil for a while and break them down. Soaking for 24 hours first never hurt.

I would cook all 4 and freeze the leftovers. If you cook 3lbs of beans or 4, the mess is the same.

Cook them all and freeze what's left. They freeze well.

Save yourself some time and buy the 6lb can of blue runner



add 4 cans of drained red beans




buy some good quality smoked sausage/andouille and diced ham





brown sausage/andouille and ham with some seasoning blend and Slap Ya Mama seasoning





add 4 bundles of chopped green onions / save 2 more for topping in each bowl



stir all together and leave it on low, stir often to keep it from sticking, 45 minutes later you have enough for a crowd
