I think the rule is you have to survive the process of making the catch. We've seen plays before where a wide open receiver clearly catches the ball in the endzone or gets his toes down on the sideline and then when he hits the ground the ball bobbles out. And they always rule that incomplete because the receiver "didn't complete the process". This one just happened to involve a defender snatching the ball as the mechanism that interrupted the process.
It's not the same as a RB getting the ball ripped out after his knee has touched because he isn't required to complete anything.
Maybe that's not fair and maybe it's a stupid rule but this is how it has generally been called.
