I grew up on the Mississippi Gulf Coast, my mom made it a lot for us growing up.

Poor people's food I suppose.

Poor Italian/Sicilians in LA ate spaghetti with eggs. Others ate weenie spaghetti.

Eggs were used as a protein filler. Boiled or poached eggs in red gravy, stews, red bean gumbo, etc. Grandma is feeding a family of 6 and adding a few eggs helps fill them up.

I grew up thinking chili is supposed to be served over noodles. No, just a way to stretch out the meal.
