Looking for some good low-fat recipes. Any help is appreciated

My wife just entered the third trimester of her first pregnancy (no pics, thanks for the congrats on the sex) and she's starting to have some gallbladder issues.
I need to cut out fat, but since I'm the cook and will be along for this low-fat ride, I need to make it palatable for myself as well. I've never been on any sort of diet and low-fat wasn't in my vocabulary until this week- so any and all recommendations are welcome from the FDB. TIA

Taco bowls are a staple of my meal planning for simplicity and can do a ton of stuff with it. I'll brown 2lbs of 98% lean ground chicken (use whatever low calorie cooking oil/spray you want) and use whatever taco seasoning you like and make ground taco meat out of it, while it is simmering down and starting to almost be completely thickened up, i'll add a drained can of low sodium black beans to that and let them cook together until i'm ready to serve. All of that together is ~1415 calories 80.5g of carbs, 17.8g of fat, and 228g of protein. Then you can pair it with pretty much anything you want. Do some air fryer sweet potatoes or regular potatoes and some veggies. Use rice and make a rice bowl and add some salsa/corn/avacado. Make actual tacos with it. Depending on how hungry I am and what I want to do, that is 4-6 meals generally.
I don't use this exact recipe, but it is fairly similar to one I use for simple air fryer tandoori chicken. I typically use thighs, but can do the recipe with any cut of chicken you want and just adjust cooking times/temp accordingly. If I am wanting lower fat, i'll use low fat greek yogurt instead of full fat.

Sandwiches, pasta, quinoa, piece of protein pan seared and any vegetables, the options are nearly endless.
Just don't add cheese, mayo, etc.

Good point, in reality almost everything is low fat if you just avoid full fat cheese and most sauces
. Use the low fat/calorie/sugar versions of those items and generally good to go. Can substitute some other proteins in the place of your beef/pork ones for a leaner cut, but ultiamtely you hit the nail on the head for probably 90% of recipes.

So glaring omission in my OP- I need to get her iron intake up and pair that with vitamin C so she can absorb it better.

you can also address vitamin and mineral deficiencies with smoothies which are a bit more appealing than a handful of capsules
otherwise keep dairy to a minimum, no fried foods, no mayo, no processed foods, etc. low fat is easy it’s a matter of fresh ingredients cooked simply without amendments

Use red kidney beans instead of black beans. Lentils, quinoa, spinach are all good plant based iron sources. Lean beef obviously can be used as well. Saurkraut is another good source that is often not thought about.
Can always just take an iron supplement/calcium supplement as well.

Stir-Fried Asian dishes with rice and vegetables, stuff like beef with broccoli and kung pao chicken. Use lean meat, lots of vegetables, and control the amount of oil.

Swiss Chard is a staple in my backyard vegetable garden. It is pretty heat tolerant and will last from fall to early summer in the N. O. area.
It is an excellent spinach substitute and is great raw in salads and good for stir-fry.

Use leaner ground beef like 93-7.
Beef Chili - Iron from the beef, viatmin C from the tomatoes.
Meat Sauce & Pasta - Iron from the beef, viatmin C from the tomatoes.
Ropa Vieja y Congris con Pico de Gallo - Iron from beef and black beans vitamin C from the tomatoes and lime juice. Skirt steak is pretty lean if you trim it well.
Oxtail Stew, Rice and Peas, Steamed Cabbage - Iron from the beef and pidgeon peas, vitamin C from the cabbage substitute leaner cuts of beef like bottom round
Pot Roast in Tomato Gravy - you get the idea...
