No. How is it possible for all the life on earth to die off other than humans?

When humans have consumed all reserve food stores, we consume each other. That's the central tragedy of the movie.

The Book of Eli

Gets my nod. Minus Denzel's character.

The Postman

Too.

I think my favorites, and two of the most accurate depictions of the decline of civilization are Children of Men and The Road.

Children of Men is great. While the larger premise is not very realistic, everything else is (or seems to be, I guess I should say, not having any personal experience with the collapse of civilization )

Excellent list. But I didn't really like Postman and I think Demolition Man was more of a Utopia type society.

Can't believe we didn't say the Matrix or Independence Day. Also 12 Monkeys and Wall-E.
