What Should the Official LA State Foods Be?

If they were to adopt some. LA's food heritage is so rich will be tough to come up with categories much less specific dishes.

Official LA State Symbols

FTR, official TX foods:
Dish - chili
Cobbler - peach
Pie - pecan

Chili ought to be replaced with brisket but the peach cobbler and pecan pie are solid picks.

I think we need to add freshwater (catfish?) and saltwater fish (specs? reds?) and don't forget all the sausages, shrimp, and crab. I bet the LA legislature could have a big scrap over this.

Louisiana would have controversy on dozens of food categories, much less one state food, for example

hot sauce - Tabasco, crystal or Louisiana Hot Sauce
Soup - gumbo (what kind?), turtle, oyster artichoke, crawfish bisque, etc
sandwich - Muffelatta or Poboy (which one?)
shellfish - crawfish, shrimp, crab or oyster
oysters - half-shell, chargrilled, bienville, rockefeller, etc.
shrimp - boiled, barbecued, remoulade, creole, etc.
crabs - boiled, au gratin, stuffed, etc
crawfish - boiled, etouffee, bisque, pie
alcoholic drink - Ramos Gin Fizz, Hurricane, Creme Brulet, Dixie beer, abita beer, sazerac
sausage/smoked meat - andouille, chaurice, boudin, tasso, etc
dessert - bananas foster, bread pudding, baked Alaska, cherries jubilee, etc.
pickles - onions, okra, pickle meat
fish - flounder, redfish, trout, etc
meat - cochon de lait, meat pies, rice and gravy (which one?), paneed veal, etc
dressing - I don't even want to think about it
condiment - blue plate mayo, creole mustard, cousin's creole tomato dressing
poultry - turducken, chicken pontalba, chicken sauce picante, fried turkey, popeye's chicken
Seasoning mix - Tony's, Zat's, slap ya momma, etc
cake - king cake, doberge, Gâteau de Sirop
donut - beignets or krispy kreme (N.O. recipe)
frozen treat - snoballs, spumoni ice cream
vegetable - creole tomato, eggplant, okra
fruit - ruston peaches, plaquemines citrus, pontchatula strawberries,
pasta - crawfish monica, pastalaya, crawfish ravioli
