I put crab bodies in a stew but not a gumbo. And those gumbos have way to much rice.

I liked the level 2 version the best of those 3. Level 1 dude adding tomatoes... I had a feeling that was coming based on his previous work I've seen

Level 2 definitely won, land animals in seafood boo on level 3.

Level 1 guy did pretty well for doing it his first time even with the tomatoes.

I put crab bodies in seafood gumbo. It helps for a richer stock.

Their sausage/andouille were all complete garbage compared to what we get here in the Lafayette area. 1 was a middle school home econ. project. 2 - duck is the king, I just use the breasts and smother them in cast iron pot with onion and dice them up. Thyme and parsley, no thanks she can keep her so called gumbo, too thin. 3- roux way too light and it's creole so I won't even bother, it's not gumbo. 4- she began with the Kielbasa stopped right there. If you tried to pass this stuff off as gumbo around here (Crowley, N to Mamou, South to Henderson-New Iberia and back to Lafayette area) you would be laughed out of town. River parishes b/t B.
R. and NOLA do make some great seafood gumbo, I have to give it to them as well.

Agree, lvl1 wasn't too bad.

It was a simple quick gumbo. We do rotessiare chicken sometimes, it is quick and cheap.

Crab bodies has a better flavor, but fish sauce is good too.

it is typical DTB. But i do think it is either seafood or chicken and sausage. not both.

For me, absolutely. I will sometimes use the crab bodies in seafood gumbo and sometimes not. I don't like gumbos that mix meat and seafood, though.

you can get away with it if you do not use a smoked sausage, but imo any type of smoked meat over powers anytype of seafood to the point the seafood becomes a waste.

I have To wonder what level of research 1 did.

If you like vaguely described a gumbo to someone that’s an admirable attempt. If he researched it and did that, really poor effort.

Well, of course. Lafayette doesn't frick around with sausage. I'm just thrilled Best Stop is now selling their stuff at Rouses. Now I don't have to spend $200-300 everytime I pass by there.
