Favorite "lowkey" Florida - Gulf of Mexico beaches?

I'm honestly not even too sure this may exist.
What are your favorite lowkey Gulf of Mexico beaches in Florida? Honestly, the entire coast is fine; however, I'm trying to avoid the panhandle area.
Any part is fine. I'm just looking for a sleepy beach/town that isn't overly crowded and isn't overly commercialized if that makes sense.

I’m sure you can find a secluded spot somewhere in the keys that meets your needs.

I've heard the Keys don't really provide great beach access?

Correct. But I wasn’t quite sure what you were looking for. You mention just wanting a sleepy beach/town that wasn’t crowded or in the panhandle.
Not a lot of actual sand beaches in keys. But plenty of laid back beach town vibes available. Hang by the pool or near the bay. I was thinking more of an attitude of quiet and lazy than literal sand.
We just got back from Key Largo and probably spent 15 minutes in the water the entire trip. But it was a lazy, relaxed, beach trip in my mind

Went to Alligator Point for spring break. That was as low key as anywhere I've been on the coast. Never been to Cape San Blas/St George area, but I imagine it's very similar. Closest major grocery store was about 40 minutes away. Soft white sand beaches. Tons of different types of birds. We saw the normal pelicans and gulls, but lots of terns, herons, loons, kingfishers and others that come from the bay behind it.
The only drawback, which I really didn't think was a drawback really, was the water is brown. It's from the acidic runoff of pine trees from the bay to north that runs into the ocean. All it does is make the water darker.
There were days that there was no one within 1-200 yards of us on the beach. And on clear nights, the stars were amazing. You can even get a faint glimpse of the milky way.
We split a 7 bedroom house with another family for $4600 total for the week. It was on the part of the point where it's a single road and the houses are on the ocean and you can walk across the street into the bay. I'm thinking about reserving the house for next year.

They do, but I'm not telling because if the word gets out they won't exist in 5 or 6 years.

Yes to that whole area, but Boca Grande is a bit too "society" to me. Englewood and Manasota Key are less uppity and even manage to retain some old FL vestiges.
I also like the stretch between Ponte Vedra and Vilano Beach/St Augustine. Most of it is a national preserve/wildlife reserve, but there are some rentals scattered around, esp on the Vilano end. Close enough to St Augustine if you want some "town" but also not the concrete ridiculousness of the Panhandle. I can't bear to go there anymore---my 70s childhood in that area was full of beach fires, seeing the Milky Way and phosphorescent waves at night, and now it's just....ugh.

Mexico Beach. Probably my favorite place on the planet.

Loved staying on Vilano. Short drive to St. Augustine, but very quiet/laid back. Sand is a little rough, but I'll take it over a crowd.

Navarre Beach is pretty quiet for the panhandle

I live very close - its extremely "lowkey". If you want to get away from it all it's not a bad pick. You have to drive a bit for groceries and restaurants, but OK.
We're having a family get together on St. George Island in a couple of months - to me that's more of a low key vacation spot because there are some restaurant options on the island, and you can buy groceries. And the beaches can be wide open too.
You are on point about the night sky and the birds. The Forgotten Coast is a pretty good place. I just hope it remains forgotten for a while longer.

Can’t recommend this place enough. We go every year. Gorgeous beaches, no high rises, pretty much every beach house has a great view. Go to the state park and enjoy the bay as well.

Dauphin Island. Port St Joe. Pensacola Beach has a National Seashore refuge to the east. You can find a spot where no one is around. Saint George Island has a New England vibe and a huge state park on the island. Great place.
