Omakase at Sushi Kashiba will certainly give you your fill of seafood if that's your thing.
I think there's a few nicer Omakases in Seattle but I can't remember the names/locations.
Disclaimer: I had to do takeout, because covid. I'm sure the in person experience is much better.

We did Omakase at Shiro's and it was amazing...
For overall dining experience, Canlis was the winner of the trip (slightly outside of downtown if memory serves)..

Canlis is open again weekdays, but is uber-expensive. We paid over $500 for 2 people the last time wife and I went (2016).
