If it's nearby, I think Alexanders would be your best option. The nicer grocery stores are still well stocked for the nicer cuts.

Lately they have been running Tomahawk specials too. CAB for 10.99/lb.

I spent $80 on a brisket from iverstines. It was terrible. Not a fan of grass feed select meat.

Cap steaks are the Spinaiis muscle or that great fatty part on the outside of the ribeye. In my opinion, it’s the best cut of meat on a cow. Defiitiely sear it over coals or in cast iron, but I have no earthly idea why anyone would want to Sous Vide this steak. One of the best things about eating steak is the texture. The chew. Sous Vide by nature (long slow, wert cooking at low temperature) takes away that texture.

Save the Sous Vide for lesser cuts of meat. Premium cuts of Prime Beef do no benefit form this at all.

The beef tenderloin on the menu to go at Bin 77 is phenomenal. Comes with some potatoes and grilled bok Choy

I love a ribeye cap steak but be aware that it is the fatty ring around the ribeye and from my experience for whatever reason is that women tend to not like this they would rather have a filet. If your wife doesn’t normally like a ribeye she probably will not be too keen on the cap steak.

Other than being grass fed, their beef leaves a lot to be desired. Guys that work there are nice as can be though. Their Flyin Hawaiin sausage is pretty awesome.

Yep, I keep it rolled through the entire sous vide and sear.
