I bought one of those unseasoned pots from Academy. Seasoned it for two hours and then immediately made jambalaya in it with no issues.

A week later I fried onion rings and seafood in it - I didn't dredge the flour well enough before dropping the onion rings and allowed a lot of flour to burn on the bottom. I cleaned and re-seasoned the pot for several hours the next day and am afraid of the burn taste from the flour to remain. I have attempted to re-season it on a burner but the center of the pot turns silver, almost like unseasoned. Have I destroyed the pot or can it be seasoned?

You can wash cast iron pans with dish soap. The "myth" of not washing cast iron pans with soap came from a time when lye was in soap.

Just wash off the burned flour and re-season. It's fine

You'll practically never destroy a cast iron pot and you can always reseason. Youtube will answer all of your questions.

I doubt you have destroyed the pot. You might have to strip it and start over. There are various ways to do this, from electrolysis to putting it in the oven on self-cleaning mode for an hour. Once you can handle it again, wash it good, then start the re-seasoning process.

There are numerous videos on this.

Because you burned off the seasoning. the heat on the burner is too much

no.

Wipe the whole pot down with seasoning. wipe off excess so that there is only a thin layer. put in oven at 400 for an hour. Do this 3-4 times. Wash with soap and water next time you use it. dry it out on burner (do not burn it off). wipe again with seasoning and store it.

I restore cast iron as a hobby. AMA

Not sure what this means. Knowing your seasining method may help us.

BTW, one of my hobbies is restoring cast iron also.

You can literally just sand with sand paper a cast iron down, then reseason. You can do that pretty much no matter what you've done to it, you just get it to the bare metal and re season.

Just put some oil in it and pop it in the oven on low for like 2-3 hours. That's the lazy way I do it and it works fine.
