Sometimes being inauthentic is okay (as long as it's not one of the the things I'm a stickler about).

I want chili as opposed to stew.
no beans and i run my meat through the big hole once

If someone serves me chili with beans, I do my best to eat around them, but I don't like the flavor or the texture they impart. I'll eat around "unground" meat, too.

I'm pretty open to chili variations, I prefer ground meat, lots of veggies and medium alarm. I drew the line with a friends version of chicken and white bean chilli, it was good, but way out of the box.

I have a great recipe for that in the recipe book. Some folks on the board have made it. It's not my thing, but every time I make it, people inhale the stuff so I make it for other folks.

I've made it. It's pretty good. Pales in comparison to you crab and corn bisque though.

Thanks and I agree, but I prefer that type of soup over chili of any kind any day.

is this just to piss off the mexicans or do mexicans not like beans as well?
The original Chili Queens of San Antone never put beans in their chili.
Yeah, texans take it seriously. Just as louisianans take gumbo seriously.

I don't use ground beef if I'm doing chili without beans. I like to use cubed beef, usually stew or soup meat that I've cut a little smaller, or a chuck roast. For some reason, having the meat be in a more substantial form seems to work better for me.
I do the same thing. I prefer my chili without beans, so I like the meat chunkier.

I love beans in my chili. I use red beans and green beans in my chili (I know using beans technically is t chili), as well as corn. Also use ground beef, ground chorizo, and chopped up Andouille sausage. Delicious

Make a chili verde instead and use pork for the meat if you want to throw your guests for a loop.

I'm with you. Always put beans in my chili. Also always put it over rice. Seems strange eating just chili.

I never make chili with beans. Or tomatoes for that matter. Just meat and chilis and spices. It's called chili, not tomato.

The old saying is "Those that put beans in chili, don't know beans about chili".

I made the no beqn chili and have to say it was much better than my normal venison chili. I think I am a converter to no beans.
