Bourgeois? In Thibodaux? No offense my man, I ate tons of that shite back in my college days and I still stop in when I'm in the area, but it's not on the level of some of the others mentioned.

Really like Wayne Jacobs. Chisesis hogs for the cause smoked sausage is pretty solid. Rouses has it usually.

I like the flavor of DD sausage but it's a very greasy sausage. I use it occasionally. I brown it first and remove most of the excess grease because I don't like greasy gumbo.

If you can't access a specialty meat store, this is the best alternative out there IMO.

Another Alabama guy pushing Conecuh on the Louisiana folk. Lol. Happens on every sausage thread.

Conecuh is ok for the grill with the breakfast sausage seasoning they use, but it’s not the same as Louisiana smoked sausage, not one bit. It’s not comparable, an entirely different flavor. You Alabama folk just don’t get this.

Oh, and who the hell wants to eat cold smoked sausage???

truth be told I had never had it (or heard of it) until I was well into my 20s. My first sergeant (from Wisconsin) had grilled some at a cookout.

Same. I've tried it several times because others really enjoy it, but I did not. I never put it in gumbo and wouldn't.

Rod's in Church Point is excellent sausage for gumbo. Also, their smoked tasso is great for red beans, gumbos and even a little in a chicken fricassee.

Rita's between Iota and Basile (on Highway 98) makes really good sausage for gumbos as well.
