As someone else suggested, I think publishing the menus ahead of time sounds like a good idea in theory but it could potentially sway the judging.
sway the judging? The public doesn't judge the food. It might sway sales but only food the foodie types.

Yes, sway the judging. Especially in the porkpourri category. The judging is done blind. We didn't know what entries belonged to what specific team. If judges were able to see ahead of time online what specific teams were making it could potentially sway the judges' votes.

As i said in an earlier post, i think one of my favorite things were the cracklins from Swine Spectators. However there was another team trying to pass off cracklins as pork grinds.

All in all a lot of good pork was consumed and some bad stuff was present as well.

I did appreciate the fact i could buy whole six packs of beer as well as trade in my abundance of food tickets for drink tickets. That was seriously clutch at about 5pm!

I was able to snag a bag of these hot, limited quantities. Very awesome, wish I was able to get more.

Its not the swaying of the judging, most teams are very very secretive about what they are cooking for public sampling or porkpourri. They dont even tell me.

Went Saturday and had a great time. The lines were rough for a little while, but they seemed to die down later on. The only issue I had was the two different ticket types. That seemed to confuse a lot of people including the volunteers handing out the tickets, which in turn slowed the long lines.

Anyway, great fest and ill certainly be back. Food and bands were great.

The arancini? I had it as well and it was good.

Think they used orzo for the mac portion.

Does any of the "small time" competitors feel slighted? I noticed a bunch of small tents that weren't getting any action whatsoever. I kind of felt bad for them.

On the flip side, those teams with the huge tent/parties were complete shite shows

There was one guy who just had a lil tailgating tent and a stack of trays full of what looks like small jello shot sized things of sauce. I felt bad for the guy.

I kinda wondered about this myself. Several small outfits had great stuff, but weren't seeing much action due to the lack of hoopla.

Then at the other end of the spectrum were the ultra-loud, DJ hawker extravaganzas. One in particular had not a single patron in the 15 minutes I observed their operation...couldn't decide if the food wasn't good or if people were driven away by the volume.

Everything I sampled as a non-judge was damn tasty, with the sole exception of a truly awful bowl of chili; it needed way more cooking...was practically raw.

That had to be the guy at the far end of one of the rows(can't remember their name)? I felt bad for the groups nearby, he had to be running people off. I know when I was walking by, he started baggering one of my friends to eat their food. We got the hell out of there.

Didn't want to get near that booth. So freaking obnoxious.

Guess it depends on the booth. I know some rookies that sold out of everything.

Wild Hogs?

Captain Porkenheimer and 6* of Kevin Bacon had big tents over there, the latter being pretty obnoxious

I avoided those tents. They should have some very basic regulations next year to prvent shite like that, imo

Kevin Bacon's sound system was louder than the Nola stage speakers

I definitely could have lived without the repeated train horn & bad lite rap/fake house music...as an aside, what in the hell is the proper musical genre name for sh*tty "club" remixes of mediocre hip hop? I expected to see a costumed troop of dancing, bumpin-n-grindin tweens pop out from behind those speakers, like at a suburban mardi gras parade.
