I use ground beef for a quick and easy chili, but cubed chuck is a very popular option. Or a chili verde with cubed pork shoulder is another great option.

I prefer the texture of a ground meat chili to any other style. My chili, my choice.

I use good ground beef and small cubes of beef added to it for about a 50/50 ratio with both. I brown all the beef and drain any excess oil it may release to cook the onions, bell pepper, garlic, etc.
Spices I use are cumin, chili powder, smoked paprika, cayenne or my habanero pepper sauce.
Of course also tomato paste, petite diced tomatoes, tomato sauce and any other wet or dry seasonings I choose to add to it.
I cook it all down for at least 2 1/2 to 3 hours.

People get snobbish AF about chili.
I like chili and I make it all kinds of ways. Sometimes I get hardcore and use a variety of dried chilies and cut up blade steaks. Last night, I used an envelope of McCormick’s and ground beef from Target. It’s all good

Other posters have already provided great options. Ground hamburger is fine especially if you've got chili dogs, frito pie, chili omelettes or anything like that in mind.
Give cubed stew meat a try or cut some chuck into cubes. Smoking first adds a great dimension if you're feeling smokey. Even a chili grind for ground beef is often available at groceries. Add some cocoa powder or ground espresso/coffee to the usual spices. Give it time on a low simmer to get fork tender.
My shortcut for convenience...2 Alarm chili kit plus cocoa and espresso.
