What size pot do I need to buy to cook for 50 people?

You could do it in a 5 gallon, but it would fill it up

For 50 I would use a 10 gallon.

A 5 gallon is going to give you 50 scoops. No more.

Of course depending on how big the scoop is, I can cook 7 pounds of rice in my 5 gallon pot, I figure 7 hungry people per pound of rice and fewer if there is mixed company or other things to eat, also figure for the gratin in the bottom and it can be done in a 5, but will fill it up

You simply figure you’ll have 4 gallons of jambalaya cooked. Never figure on the same gallon amount as the pot because you never will.
So 4 gallons is 512 ounces.
512 ounces will give you 51 (10-ounce) scoops.
10 pounds pork or chicken
5 pounds sausage
5 pounds onions
7 pounds rice
1 gallon plus 6 cups water
And whatever else you add (bell pepper, celery, etc.)
That’s my ratio for a 5 gallon except I normally stick with 5 pounds of rice and 1 gallon of water. Use 7 pounds of rice if you need 50 servings. I grew up cooking on a 5 gallon pot, my first pot. I never use it anymore. Always cooking 15 gallon or larger. The rare time I do get to use my 5 gallon it brings me back to my roots.

That's right. You can fit a 7lb rice if you cook a 2:1 jambo (meat to rice). I always cook a 3:1 unless for the house or small gatherings. If I'm doing a job I let the customer decide what the ratio is since they're paying. Most choose 3:1 unless it's a fundraiser and they want to maximize profit.

I have a 10 gallon that I can feed 60-75 depending on how hungry. A 5 would stretch it.

Couple questions here:
-So are ya'll using aluminum pots, cast iron or what?
I have only used my 2 gallon cast iron pot. I've not done for a large group before.
-With these big pots, the process stays the same, brown meats in pot, pull out then cook down veggies, etc?

Cast iron pots. All pots over 5 gallon will more than likely be round bottom. 5 gallon and smaller can be either round or flat bottom.
Cooking a big pot is simple. It just takes more time. If you can turn the heat up and down, you can cook a jambalaya.
A 5 gallon pot will take 3 hours
10-20 gallon, 4 hours
30 gallon, 5 hours
Brown sausage, remove
Brown meat, remove
Brown onions
Add meat and sausage back and water
Get to a boil and add rice
Cooking a big pot is simple. It just takes more time. If you can turn the heat up and down, you can cook a jambalaya.

Don’t be scared to cook a big pot. Like I said, it just takes time. It’s not hard if you understand what you’re doing and why. And it’s not hard to understand.

My 6.5 gallon is the perfect 50 serving pot. 10 gallon is the safe bet, plenty extra room.
