Lo mein is pretty flexible dish. Protein is a must but veggies(onion, carrot, cabbage) optional.

Not crazy. Like I said very flexible. One seem bell peppers, Chinese cabbage, snow peas, baby corn. The important thing is too have soy sauce and oyster sauce to pull everything together. Some chicken bullions to elevate the flavor would be nice.
