Lunch - Laura's II, stuffed baked turkey wing

one of the best plate lunches in Lafayette - stuffed baked turkey wing, rice n gravy, corn maque choux, seafood smothered okra with crab & shrimp

Cooks Country TV show did a segment that referenced Laura’s and made stuffed turkey wings that were supposed to be similar. George Graham has a recipe on his site, Acadiana Table, that says it is based on Laura’s, but his and Cooks’ recipes have some differences. Not sure which is closer to the real deal.

Looks delicious. I watched the Cook’s Country video. The only stuffing was a few cloves of garlic. What was your stuffing?

I’ve eaten at Laura’s II countless times and the food, gravy, sides, and stuffed turkey wings taste the same as they did 25 yrs ago,
The TW is slit and stuffed with a cayenne pepper seasoning paste. Here is how it has been described … “A popular order is turkey wings stuffed with a crimson paste of minced garlic and spices then cooked until it falls apart at the joint.”
Over the next few weeks I’m going to experiment in the kitchen and try to duplicate the crimson paste. I’m guessing specific combination of smoked paprika, cayenne pepper, garlic paste, onion powder, and ???
I’ll keep everyone updated. I work across the street from Laura II’s so I may order a plate lunch to go and perform a necropsy of the cooked wing. You can easily see and taste the cayenne pepper between the wing meat , skin, and bones.

Lunch spots fill up fast. Had some out-of-town friends come through and we wanted to go there, but no availability. Had to eat next door at Julien's Poboys. Still good, but not the Laura's II turkey wing lunch we wanted,

I looked at both those recipes and they are quite different. I'd like to know which one is closer to Laura's II. I've never been there.

I've never had that one, but there's a place in BR called DC Eats that serves a smothered turkey wing with dressing on Fridays that's really good. I get it with the mac n cheese and candied yams.

That wasn't at all the cooking method I expected. Maybe it was because I watched the Cook's Country video.
I assumed the turkey made it's own gravy for the rice and that more than just dry seasonings were used.

The stuffed TW are so popular they are served 6 days a week Tues - Sun. The original Laura’s on Voorhies Street only served them on Wednesday since that was the only day Ms Laura could get them. LII’s has been open since 2000
