My stab at Sous Vide tonight (Ribeye)

Prep time, about 10 minutes. 1 hour for the steak in Sous Vide. I then vacuumed, took my dogs out, showered, and put a load of clothes in the washer. I didn't have to stand by the fire either.
8 minutes to rest. Seared about 90 seconds per side.

Good looking steak.
I like to do an infusion when I sous vide. No bag needed. Just drop the steak in a bath of Dale’s liquid smoke with the vide set at 90 degrees. Let it go for 10-12 hours.
Take out and then toss in a hot pan for 4-5 minutes. The steak will be wet so it will basically steam itself up to 120-25 internal.
Once it’s dry and up to temp, toss it on a charcoal grill, flipping every 10 seconds until I get a nice char.

Not to yuck your yum, but 90 degrees for 10-12 hours would be a long arse time in prime bacteria growing temp. IWNEI

Is this serious or a bad joke? That would be one bacteria infested, super salty steak.
