Agreed. I like the creaminess of the mayo, and the mustard serves as the tang to enhance the flavor. I think your 75/25 sounds about right

Was my grandma's secret ingredient in her potato salad. She's been gone for almost 20 years now, and still haven't found a better potato salad.

It really is fantastic. It's what my wife uses in her potato salad. Has to be Blueplate Sandwich spread, according to her.

This is me. I like mine to definitely be a yellow mustard potato salad. But as far amounts that go in it is definitely a higher mayo than mustard ratio. Doesnt take that much mustard to get what ya need.

Although I've never measured it. I'd say 70/30 mayo to mustard.

Then diced dill pickles, onions, bell peppers, salt, black pepper, and papirika on top. Boiled eggs sometimes, good with or without.

No sugar.

The way mama made it.


ETA: Mine comes out looking alot like this, and this recipe only calls for 1 TBSP of mustard and 1 Cup of mayo.

I’m assuming he meant Aaron Franklin? Snapped this from his book. It’s pretty good but very mustard and vinegar forward.

60% Blue plate 40% creole mustard. I also always use dill relish over sweet relish.

I like to make my potato salad after boiling potatoes in some seafood boil instead of plain water. To this I will mash them a bit to break them up and then in a separate bowl add diced onion, celery, homemade bread & butter pickles diced small, salad olives with pimento diced small, green onion, cut up boiled eggs, some mustard and a good helping of mayo to keep it fairly moist and then mix it into the potatoes.

Adjust mayo if more is needed. I usually don't add salt or pepper to this potato salad since they are pretty well seasoned out of the seafood boil.

I like miricle whip, good mayo and a little sour cream as the base. 40-40 -20%. Chunkie potatoes which I lightly add a garlic olive oil dressing when they are still hot.

Caramelized onions and crunchy bacon, diced potatoes, diced boiled egg, mayo, cider vinegar, and mustard. Served warm.That is my favorite.


Every day, a basic potato, egg, mayo, and a little mustard mixture seems to cure itch for potato salad.
