Wow! Nice work. Great pics. Saving this bad boy to try later..

I didn't see filet gumbo on your ingredients list. I usually toss in 1-2 tablespoons while sauteeing the trinity and later as a garnish with chopped parsley.

Hotdamn, that looks good.

I did one for a crowd at my house Christmas and did shrimp, sausage, and minced crab. I got 4 tubs of minced crab for about the same price as one tub of lump crabmeat and gets a lot more crab flavor in there.

When I want to do one for myself this looks like a hell of a route to go though

How much stock did you end up with? you have 3 gallons of water but, I'm assuming that the end result was less than 3 gallons. I'm going try this with a smaller pot so, I need to figure out how to adjust the ingredient amounts.

Holy bump Batman. I remember going out, buying all the shite and making a seafood gumbo the day I read this thread, 9 years ago. And have made many like it since. It's all about the stock.

This is what has kept me from ever making a seafood gumbo.

Do y'all devein your shrimp for gumbo?

I devein shrimp for everything but boiling.

Only thing I'd do differently in that gumbo is crab fingers over gumbo crabs.
