I'd go with a 100 qt pot in case you need room down the road. 80 is big enough for a sack and lots of fixings though. 60 qt is barely big enough to do a sack and no / minimal fixings.
Bayou Classic is probably the most popular burner because of it's cost and power. It's not the best burner out there, but for the cost, it's a good value. I've had one bayou classic single jet for 10 years and had no issues with it, besides that one time the fitting was a tad lose at the burner and the gas hose started to catch on fire
. That was scary. I've had another bayou classic for 5 years. Amazon had a sale on them and it was only $30, so I bought it. After about 3 years, the regulator failed, but that was pretty cheap and easy to replace.
If you are getting an 80 qt pot, a single jet should be fine. If 100 qt or more, you may want to consider a double jet.

I believe when someone says "sack of crawfish" most people go with the assumption they are talking about 40 pounds. Or that is how I always think. Maybe I am wrong.
Traditionally a "sack" was either 40 or 45 lbs. As time has marched on, and you see more grading/sorting of crawfish, sack sizes have come down.
I also generally order in pounds as well, but usually in increments of 35-40. I might order 35 lbs but I wouldn't order 50 lbs. And usually, they get something close to it and that's that. So when I order 35, I might 33, or 36, etc, which is fine.

Schaefers on Lake Avenue in Metairie breaks sacks and gives you exactly what you order. Which I like, I don't think this is common.
Saturday I asked for 50 pounds. The sack has 32 and the other small sack had 18 pounds.

I think the size difference between an 80qt and the 100qt is kind of blown out of proportion. I started out with an 80qt. As long as you don't stuff loads of extras then 80qt will do just fine if you want to be cost conscious.

If you want the best check out the link. Very expensive but the best boiling rig I have seen for up to two sacks. As I get older pulling out the basket from a traditional boiling pot gets harder and harder. This type of pot solves the problem. Come check out mine.

We don't use ice either. But we do spray the outside of the pot once we cut the gas to help cool down and stop boiling. Then let soak - no specified time. Taste ever few minutes until we like them.

That's my go-to way of letting them soak. No ice to dilute the boiling water. Just taste occasionally for seasoning and go with that.
But it is nice to have consistently sized crawfish like you get in most sacks today. In a very mixed sack with small to large, they take on the seasoning at different rates.

Oh I've tried it. You'd be better off buying crawfish tails and eating a spoonful of seasoning before eating the tails. Same idea.
