Funny you bring this up. I've had three different guys last week swear by mustard. And one guy said he also cuts two large oranges in half and drops them in. I've yet to try adding either though.

A lot of people do this shite in Houston and think they're doing it correctly.

I am all for everyone having their own method, so I would rarely consider any method wrong. But this method is wrong.

This and over/undercooking are really what I consider to be major violations.

Added: there are also now a lot of places correctly boiling crawfish in Houston. So that's good.

That's from restaurants reheating what they didn't sell the day before. Almost impossible to have mushy crawfish fresh out of the pot.
ETA: Its not totally impossible, but anyone that is cooking in a restaurant should be able to avoid it on a freshly boiled pot.

How do you undercook crawfish? I've never heard of someone doing this. I immediately cut the fire when they come back to a boil, and they are definitely cooked by that point.

Oh it's possible. A few places in Dallas don't get enough to be able to reheat from the day before, they run out every day. But they still have mushy crap that they serve.

Maybe reheated from earlier in the day or something. Or reheated to serve. I have no clue

Been to one where the guy didn't know what he was doing. Didn't let fully come to a boil. I agree overcooking is way more common.

I had some from Sammy's that were mushy the other day. The first 3 pounds I ordered were good. The second 3 pounds I got were just bad. I should of sent them back.

Whoever on here that says you can't screw up crawfish is dead wrong. Backyard boils with friends I've had good luck with over the last 30 years. But crawfish served at restaurants can be iffy over the years.

A friend showed me this. Makes them crazy spicy. The little pepper rings all but disolve. I never knew they were there, just that the crawfish were fire.

I honestly thought EVERYONE did this. I've always done it in every boil, all of my friends have done it. Always add two oranges to every boil.

I have a nephew who adds oranges to his boil, but I've never tried it.

I go 50/50 on the oranges and lemons. Sometimes just oranges if I don't feel like buying both.
