I tried Godrick again at level 31 with a +4 (or 5) Blood Uchigatana and I still lost twice. The second time I got his health down to the 'G' in the Grafted part of his name.... so demoralizing.

Do you honestly expect to beat a "Souls" boss in one or two tries?

Cruised through quite a few bosses on the first or second attempt in Bloodborne and Sekiro.
I either get them quickly or it takes me 50 tries. No in between.

What attribute points do yall like to level up? I am playing as a vagabond character using a Longsword +4 and a Brass shield +1.
I'm currently at level 33 and have been doing fine. Just beat Margit since I spent so much time defeating whatever side bosses I would run into. Is there something I should start focusing on?
Current stats below:
Vigor - 23
Mind - 10
Endurance - 17
Strength - 22
Dex - 15
Int - 9
Faith - 9
Arcane 7
ETA:
I am the same way with these games.

Since I am doing a DEX-Bleed build, mainly just Vigor, Endurance, and Dex. Occasionally, I put a point in Mind. The only Achilles heel I have had are the crystal enemies, where my attacks just bounce off of them. But my Bloody Slash Ashe of War seems to shred them.

It was probably my 5th or 6th try. I tried him twice when I was around level 25-26 (before I decided to grind to level up). Got him to 2nd phase on the very first try then I got rolled. Leveling up has allowed me to almost defeat him with really not even figuring out his moves entirely.

Are you using any summons? The pack of wolves summons makes Godrick pretty easy.

I was using the Jellyfish first then the Skeletal Militiamen I got recently. Have the wolves but don't think I've tried them.

Godrick is easy once you understand how dodge his dragon attacks.
If he does the sweeping fire breath you dodge roll through it. If he breathes fire on the floor just run backwards, if he does the eruption then run towards him since the fire won’t hit around him

Is this game any good?

Par for the course, most bosses are easy/medium difficulty at worst, but there will be a few oddballs that are actually hard. It was the same way in the other souls games.

1. Are you two-handing your weapon or using a shield to Guard Counter?
Was trying to duel wield the great sword and the zweihander. Then tried the turtle shield and the uchigatana, tried the twin blade. I like the halberd on horseback
2. Which big arse weapons are you using? Do they have any sweeping attacks or are they just poking/slamming in a straight line?
See above
3. What's your poise? Huh?
4. Are you using jumping R2s at all? I need to try that.
5. Have you played a strength build in any other Souls games
Never played any other soul’s games

I haven't tried great sword in this game, but it seems like it would suck considering how agile the bosses are in this game compared to previous Souls games. Uchigatana or any of the katana are pretty busted right now because bleed buildup in Elden Ring does massive damage. It's almost as busted as strike damage was in DS2.
Fr33, poise is the stat that prevents you from getting staggered, so the higher the poise, the less likelihood you get staggered. It's actually good to have it high for boss fights, because that means your attacks will be less likely to be interrupted (even though you are taking damage still).

You do it at those lost graces I believe. Should be one of the first options.

You know what is a really good weapon combo? Dual wield straight swords.

I keep running into messages urging me to do butt stuff. That first boss whooped my arse, I only got him down like 50%. I'm having fun, but I have zero idea what I'm doing
