Oblivion absolutely smashes Fable. Fable is not only incredibly easy but it actually lacks so much content that Oblivion has. Oblivion wins hands down my friend.

Depends on what style you want. Oblivion is a first-person game with RPG elements like hit points and mana points, set weapon damage and armor class, and quest-based gameplay, but the combat is live action using the right trigger.
Fallout 3 is made by Bethesda, the developers of Oblivion... and it's essentially Oblivion except with guns and the wasteland of post-apocalyptic Washington, D.C. I can't tell you whether Oblivion or Fallout is better. My guess is that it comes down to whether you prefer fantasy or sci-fi. Oblivion also has a great deal of customization that I feel Fallout 3 lacks, but Fallout 3 has a really great combat system that's hard to explain but you can find videos of it on youtube.
I guess the general consensus here is that Oblivion kicks the shite out of Fable II. I think my opinion that Fable II right up there with it is biased by the fact that I'm tired of Oblivion. Fable II is more action-based than even oblivion, with melee combos and ranged weapons with manual targeting... etc.
My personal favorite Xbox 360 RPG is actually Mass Effect, a both futuristic and realistic (or it tries to be) idea of humanity once we have discovered sentient life in other galaxies. It's a blend between RPG and third-person shooter, and follows the Baldur's Gate/ Neverwinter Nights/ Knights of the Old Republic/ Jade Empire system of conversation options. Unlike the other two games I mentioned, you actually choose your own dialog in this game and what you choose to say in a lot of situations has a great impact on how the story progresses.
And then there's the sort of Final Fantasy style game, Lost Odyssey, which involves an extremely linear storyline (spanning 4 disks, I might add) with all combat occurring in random encounters.
So, with all of that surface information aside, if I had to rate these 5 RPGs, I would do it like this:
1. Mass Effect - again, personal favorite. I don't even feel that it's the best game out of the 5. I'm just really intrigued by the Star Wars style environment and the way almost everything you do is consequential
2 & 3. Oblivion and Fallout 3 - I don't even know which one I prefer more, and I certainly won't say which one is better. They both have incredible fortes and very few problems. They will both pull you in for days or even weeks with open-ended gameplay and all the things to do and places to explore. As a side note, if you decide to get Oblivion, I recommend the game of the year edition. It comes with two expansion packs that really add a lot of extra content to the game. Well worth it.
4. Fable II - I said before that I couldn't decide between Fable II and Oblivion, but after thinking about it, I must concede that Oblivion is the better game. There are some intangible things about Fable II that I love, like the very dry humor and self-awareness the game seems to have, and the innocent fairy tale environment. But the storyline is a little too short, some of the features are a little too underdeveloped (like co-op), and it just seems to have a lot of unrealized potential
5. Lost Odyssey - This is a good game, but it is NOT for everybody. I would say this game's appeal is limited almost entirely to fans of Final Fantasy. In fact, you could say this game is nearly a clone of Final Fantasy X with a few more fantasy elements and improved graphics. It does have the Chrono Trigger style turn-based combat though, if that appeals to you. There's just a lot of leveling up of characters and accessories to be done, and tough boss battles to be fought. I can't say that much about the storyline because I'm only about halfway through disk 2 and haven't played it in a while, but I will say that there is very little exposition in this game. You pretty much find out about the plot as the characters do, and as their memory is restored. You may feel confused for quite a while at the beginning because you have no idea what's going on, but it's supposed to be that way. That makes it both frustrating and interesting at the same time.
So, with all of that shite said, you should probably go to gamespot.com or ign.com and read/watch reviews of these 5 games to decide if they would be something you are interested in. I really enjoy gamespot video reviews and find them to be extremely helpful when a new game comes out that I am unsure about. I know this is another unnecessarily long post, but I really enjoy talking about it and I have nothing better to do.

For some reason I have this idea in my head that Oblivion is hard as shite? Is this true?
I think I like the plots for Fallout and Mass Effect best (I've read some really general overviews besides yours). But if oblivion really is the best game, then I might go with it.

You have a difficulty meter in Oblivion, so you can set it to anything from boringly easy to impossibly hard. Once you learn to maneuver around and block with your weapon or shield, you shouldn't have too much trouble. It can be a bit more difficult if you're purely a spellcaster, but even then it's not bad once you get used to targeting.

There's nothing really confusing about them at all. All of the games I mentioned have some kind of tutorial level at the beginning.

Never played Fable II but Fable was about seven ounces of bleh after all of that hype. Not the worst game i've ever played, but nothing special. Oblivion + mods blows it away. I'm sure the modding community will do similar things for Fallout 3 in a year's time or so.

Just started playing Fallout 3, and boy has it taken over my life. Way better than Fable 2 in my opinion.

It all comes down to perspective. I don't consider Fable II to be a true RPG. It is more of a hack and slash adventure game than anything. I love both games but for different reasons.
Oblivion was a true RPG that you can play long after you finished the main story line, or finish re-roll as a different archetype and start over for a 100% different experience. Oblivion has a very deep character development system that as of yet is hard to match. An archer truly plays different than a brawler which is night and day to a magic user. Oblivion also has a very robust economy that forces you to be somewhat frugal for a long period prior to gaining enough wealth to be self sufficient. The story actually plays a secondary role to exploring and doing side quests.
Graphically I don't think it is arguable that Fable isn't far superior, but there is only a quarter of the area to explore. Fable you play one way as either evil or good (I thought it was weird how you are either the spawn of satan who eats children or the messiah with no real middle ground) that really does not effect overall gameplay much. You can try to be a magic user or fighter or what ever but the basic gameplay is still just mashing a button and swinging something and tossing in the occasional spell. The economy is also way jacked up. You can be rich beyond what you can possibly need very quickly and with the lack of difference making items in the game money becomes trivial far to quickly. The NPC interactions are also priceless and 2nd to none in the gaming industry. You can sit in the town square for hours watching people freak out or laugh hysterically at your farts. The story line was pretty incredible and almost overshadows the actual game.

If those are your style of RPG, then go for Lost Odyssey. Tales of Vesperia isn't bad if you can get past the cartoony characters. Star Ocean is an underrated RPG as well. However the best RPGS overall are Oblivion, Fallout 3 and Mass Effect are the best of the best. Pick up Fable if you just want a good game but if you are used to trigger and mana it isn't the same kind of RPG.

Morrowind was even bigger than Oblivion and it had a much creepier atmosphere.
Nothing will ever top Morrowind for me. Just enormous map and the constant effect items made you godlike. I REALLLLLLY missed constant effect flight in Oblivion.

Fallout 3 is a great game and is the best RPG on the 360 imo. The combat is awesome, and for me, it never gets old. Oblivion is very similar, but the setting and the combat is not as good as Fallout imo.
Morally, Fable 2 is a very, very bad game. It's main focus is side missions, side quests, and optional parts. If you just played the storyline (which sucks) you missed a lot of the fun. It is cool how your character changes during the game.

The problem with constant effect items is that by level 10, with even a small amount of gaming knowledge, you can make yourself unkillable. It's no surprise the devs took the soul gem + Golden Saint combo out of the game.

I agree constant items mad you invincible, but taking flight out sucked.
At some point I think you should be able to be invincible at the end game.
There were plenty of flaws in Morrowind. The constant stacking of potions. Within a few minutes of starting the game you could have almost infinite intelligence and infinite money from the pots.
But, I still miss the hell out of flight and hope they add it back.
