I've been to all three.
Monday is really special because it's day 1 and it is basically an untouched, untrodden course. You get to see it in all its glory.
Tuesday is the best day to watch the actual golf. Players seem more serious and work on their game/shots more than either Monday or Wednesday.
Wednesday is more relaxed and you get the Par 3 contest which puts you right on top of the players.
That said, if I had to vote I would say Tueday is the best day to be out there. But of course they are all awesome...

Yes, Tues is best day IMO
There’s a nice area to spend significant time by 16 and enjoy the groups coming through as they skip their first shots along the water in their unofficial closest to the pin contest
There is supposedly a nice kitty for that, but not all participate

I recommend everyone to sit on that grassy knoll for a hour or two, knock back 6 beers and 8 sandwiches, and watch the 16th festivities. It’s heaven

What’s really amazing is you can afford this.
Beer is like $4 and sandwiches are like $1.5.
So this would be less than $50. Try same plan at braves game on your way up or back. About $150
