If he is as fast and big as reported, why does he have to switch to offensive lineman, why can't he be a linebacker.

If he's 250/260 already and truly 6'3" with a frame to be 300, that's not a LB IMO. That's a DL or OL.
OT is where the money is.
ETA:
And LSU linebackers under Aranda are athletic AF. I don't think this kid is quite up to that level of athleticism.

I also watched his Sr. season and I think he can play MLB in the 3/4 if he keeps his weight down. When you look at his frame, he is far from finished growing. When his upper half catches up with his lower half I believe he will be around 290-300 as well. That's just too thick for a MLB unless your Levon Kirkland. I like him as a 5 tech prospect. I encourage LSU fans to watch his Hudl, this cat can cover some ground. I pulling for the kid.

He definitely has two sons he and his wife lived in north Louisiana in a small place called keatchi for years while his sons were really little.

I remember Trey from his time at LSU. He is a massive human. Some OLs are not naturally big, but have gotten big through workouts and diet. Trey is a naturally huge man. He was around 6-5, 300 if I recall.
There is no way to tell what this kid could be in a few years after a redshirt and a few years in a college weight/nutrition program.
The issue with walk-ons is whether they stick with it, while having to pay most of their own expenses. They usually get burned out and leave the team.
I hope this kid sticks with it.
