A more experienced RB isn’t turning up field there before securing the catch either. They’re flatening the route, catching the ball with both hands and then getting up the field and out of bounds for an easy first.

I really think Minshew put that ball exactly where he wanted to. There’s no reason for the RB to be turning up the field before the catch.

The pass was off the mark.
Should he have caught it, yes. Do I fully blame him for dropping it, absolutely not. That’s as easy a completion as an NFL QB has to make and Minshew blew it.
