Look at it like this. Putting carpet over it is preserving it for a late date when you are ready to take care of it properly or sell the house. If you have dog or kids, real wood floors are a bitch.

There are many options. Some are more expensive than others (vinyl plank). If you don't want carpet, then refinishing the wood is the cheapest. You are more prone to damage, especially if you have pets or kids, but it will be the cheapest option.

The pine that was commonly used for flooring in Louisiana was heart pine, something you only get from salvage yards these days, and it is very durable and very expensive. I owned an old house that was framed with cypress so hard that you couldn't drive a nail into it.

I sanded and stained original pine floors in a previous house a few years ago. Just rent a sander and watch youtube, it isn't that hard.
It looked amazing but the dogs did scratch it up pretty good. Of course when I went to sell it, everyone loved the "distressed" look the floors had...

Not really sure. I don't think it's tongue and groove.
If they're your subfloor you'll have one layer of wood between your feet and cold/hot weather, so you might need to insulate beneath them. They'd probably look good refinished, though.

Try this in one area and, if it does not look good, go with the snap down wood laminate for an easy DIY wood floor.

It's easy to see that most of y'all don't know shite. Rip up that carpet. Sander can be rented from Home Depot. This is going to take some time. Possibly multiple passes with different grades. Get it where you want. Then you put down your mineral spirits and finish. Chances are it's going to come out beautiful. Even if it has stains. That's patina brah. The only problem I see you running into is that there possibly could be holes to patch.

just some food for thought....if it is an elevated house and you remove carpet, it is gonna feel cold as hell in the winter....prepare for higher utility bills...
