Do not fool around with anything less than a chamber sealer.
When I was in Alaska two years ago I fished with three different guides. One of them also ran a moose operation. All three had the exact same model:
Vacmaster VP230
It's $1000 from Web Restaurant Store. But it's the real deal. You can do liquids or you can do basically an entire deer hind quarter if you want.
After seeing them fillet, trim, seal, and pack 400# of halibut for our group in less than an hour, I was convinced.

For ground meat?

And make sure the meat is damn cold when processing it. I like to put mine in the freezer until it is just starting to stiffen a bit but not frozen.

I got the LEM MightyBite #8. I is listed as 500w, and it is as small as I would want to go for one or two deer. It takes a little work and requires making sure everything is cold and remails cold. I usually wait until a cold day outside and do it outside to keep things running smooth.
