Here you go. Our deer sausage recipes are in the same picture if anyone is interested. I use natural casings for the sausage and smoke to the color I like using hickory wood.

Full Rut Meat Shoppe in Waller makes excellent burritos. My second favorite is Bergerons in Port Allen.

I've never understood why people think making deer burritos is rocket science, and why they pay for it.
If you've ever had taco night at your house, you can do it yourself easily.
Take your ground deer meat...whether you process it yourself or at a butcher, and brown it. Add taco seasoning or fajita seasoning. Don't have seasoning? Throw in a jar of salsa or some enchilada sauce instead. Add onions and peppers if you want.
Fill your tortilla with the meat, and add anything else you want. Like beans? Add some beans. Cheese? Shredded or canned nacho cheese works good.
Roll up tortilla, I liked to seal them by pan frying them for a minute. You don't have to though. Then vacuum seal. Boom.
Want me to really blow ya'lls minds? Do you like breakfast burritos? Take the process I just explained, and throw in some scrambled eggs. Boom. Breakfast burritos.

I’ve been reading these threads for years. I’m going to make my first batch tomorrow and I’ll share my process and recipe.
