You don't HAVE to use it. You can put meat in a casing and smoke it and it'll taste good. It just won't keep nearly as well.

TEETS. NO OPTIONS. I drive almost 90 minutes to home to get it ... and we get boxes of it as Christmas gifts!!

Y'all go to the Smoked Meat Festival in June ... typically the weekend of Father's Day I think. Food cook off and great music ... you can purchase food from the contestants once they turn it in for judging.

My parents helped to start the Festival .. sponsored by the VVA. They "retired" from it but it was a first class event -- I hope it still is.

(Oh and Teet's is worth the shipping if you're not in the area)

I can think of several places to get amazing smoked sausage. Guillory's in pineville/pine prairie, tboys in basile, superette in eunice are my three favorites.

Really? I haven't been impressed, but then again, I am not that picky and think a lot of the negative comments here are a bit OTT. I can't say I've had bad La. sausage other than the true andouille with lots of innards in the ingredients. I can get Rabideaux's at Sam's and Conecuh at Super Fun, so I don't really seek out other stuff.

LOL THIS IS AN ACCURATE STATEMENT. I guess i didn't mention that because it's "normal" to me. When i get TEETS sausage/pounce for christman, i'm always stoked! COOK-DAT!

Born and raised in Ville Platte. Teets does put out a consistent product but isnt any better than B&S, Pauls, Leroys, Shops, or T-boy over in Mamou. I do prefer diff things from each of the places named but idt that Teets blows everyone out of the water. Also, I'll add that when in the area, Mels on Hwy 13 between Eunice and Mamou is quickly gaining steam as locals #1 go to. The recipes are pure Mamou but the business is now owned by a great family from the Eunice area. I've recently delivered Mels sausage, pounce, and stuffed cow tongue to some friends from Houma. They absolutely lost their mind and are requesting truck loads of it now

TEETS , i refuse to cook with anything else. When I say they blow everyone else out of the water... is a stretch because as mentioned by someone else, Evangeline parish puts out a really good product across the board but i find Teets to be the best, just my .02

Little late in this thread but nobody I saw mentioned Best Stop over around Rayne. I've only eaten their smoked boudin but damn... never had any better.
