I am very happy with my Pit Boss Pro Series 1600. There are so many of these things on the market it is hard to narrow it down and pick one. A removable ash pot is a big deal. I wouldn't own one that didn't have that or some other way to clean out the fire pot without having to take all the grates and deflectors out. Also, a lot of these things claim a high number of square inches yet are very small. It is a good idea to look at them in person if possible.

The pellets make a world of difference on these things. I like anything with hickory or cherry. Kingsford and Lumberjack have been my favorites. Knotty Wood plum is supposed to be one of the best. I just haven't bought any yet.

Probably choice of pellets. But it seems to really be putting out nice blue wispy smoke throughout the whole smoke or cook now.

Maybe it took some seasoning. I dont know, but the food initially was really like just baking stuff with a slight smoke at onset of cook.

But this thing was custom designed to make the best smoked wings in the world. That is its absolute best use. I love steaks on it too. But be careful to clean it prior to cranking up to 550 or so. It was like a bomb went off with the intense fire shooting out everywhere. I had to grab a water hose and spray it down to get it under control.

Google Yoder. Best in the business. I've had one for two years now and whether its brisket or a pork butt it allows a novice like me churn out top notch bbq. A little pricey but damn well worth it.

And 100% American made.

I have been extremely pleased with my Green Mountain I got a few months ago.

It does not put out as much smoke as I would like, but I guess thats the trade off to being able to go low and slow, then hit a button and grill quickly at 450-500.

Smoke tube on grates should take care of the issue though.

Easily… probably a 18-20lb with no issue. I usually do around 12-15lbs and have enough room left over to put an aluminum tray with the trimmings to render down for tallow … you can kinda see it in this pic

I now make it a habit to crank my gravity feed smoker up from time to time because the whole damn thing was a fire ball once.

I'm a stick burner guy but used a Pit Boss a couple of times last weekend staying at a friend's lake house. Really liked it and will probably be my next grill purchase. Love the simplicity.

The Rectec doesn't have an ash clean out thing. I had a pit boss Austin XL. I liked it, but you had to clean the ash out every 2 long cooks or so. I haven't cleaned the ashes out of my 590 for probably 10 long cooks. I used to clean the ash out regularly, but found that I didn't need to.
