the early Merc 4 strokes were said to be "too quiet" and changes were made.
We had 3 of the V8 300s when they first came out, and if they weren’t in sport mode you’d barely notice them running. They were pretty damn quiet.
Pretty much left them on sport mode though

Why would any sane person ever take it off sport mode?

They are both good motors. I don't think you can go wrong either way. I typically go with whatever brand has the closest service center to my home.

If you want quiet, get the Suzuki. It’s amazingly quiet.
I tend to disagree with the ford vs Chevy analogy, it’s like if ford had a history of blowing head gaskets and imploding engines. There’s more to it than just what flavor you prefer.

I've ridden in a few boats with the new Mercs and came away impressed.
That said, this is always good advice:

Have a dealer within an hour that handles both.

They are both great motors. Like another poster said the Yamaha will have the ability to be flashed to a much higher hp if that is something the op is interested in. They even have Yamaha approved ones that won’t void the warranty. Mercury has held their codes and flashing them will not be an option.

High 60’s low 70’s good for me.
That won’t be for a while though as I learn how to drive this boat.

Those sho’s had some major head issues a few years ago.
Have a buddy who had a cracked head and have heard of the same thing on a few different occasions. Have ran a regular yamaha 250 for awhile and its been bullet proof but IMO I'd avoid the SHO. Don't have much experience with the Merc's

Nizpro or Hydrotec will do the flash. If under warranty keep the rev limiter stock. The flash is 315HP. I have 2 ecu's, one with the nizpro, and one with the Hydrotec. I can't tell a difference between the two and I run in the 90's with a 200 SHO.

I have the 250 v8 Merc on my boat and the sound is just plain awesome. Hole shot is outstanding, the overall performance is great. I worry because Mercury, the company itself, is having a ton of issues and layoffs right now. Supposedly, they went crazy and started manufacturing way too many motors. They have an overabundance of stock just sitting now. Meanwhile, Yamaha is in no danger of any kind of financial instability.
