I'm guessing they are comparing something like friend chicken tenders to a 4 layer baked lasagna. Which prob wouldn't be healthier then fried food.
I would also like to see this website, I consider myself a health nut and I enjoy reading/researching things like this website.

And that would be a simple fix.
The computer systems now are able to calculate which items are and aren't eligible for AFDC. Simply modify them (after passing legislation) to kick out the junk foods.

as long as the temperature of your oil is above 350 degrees it adds very little additional fat. the problem people run into is that they forget that adding the food into the fryer drops the temp of the oil so you have to compensate for that. start with your oil temp between 375 to 400 degrees use an oil with a high smoke point like corn, canola, or peanut and you'll add little to no fat.

I think why there is such a visceral response to these regs in certain areas is there were some places where cafeterias still served real food.
That's probably more prevalent here in the south. I feel like where we currently are on nutrition focuses more on portions and lack of fake food. So a piece of fried chicken and some green beans is fine. Totinos pizza rolls at the same caloric level, not so much.

I love this thread where we're being educated on how healthy fried foods can really be.
Provided there is some really detailed and careful preparation which I am sure the average school is all about.
