Watch the EU episodes of both the Grand Tour (Jeremy Clarkson) and Anthony Bourdain's No Reservations and The Layover. This will give you some ideas. The Grand Tour series where they drove from Croatia to the Nordics was balls out some of the best scenery I've ever seen, but I like to drive. Bourdain shows how you get fantastic food in non Michelin starred restaurants.
Istanbul could be a great place to fly into, since you can get a free day tour during your layover on the way to Europe.

I'd agree with this itinerary as well.
I've been to Budapest 3 times and love it.
Been to Prague 4 times and it's my favorite city in the world that I've done.
In fact, a GREAT trip would be just focus on Czechia. Fly to Prague. Tour the city for 3-4 days, then hire a car (we did going and coming back for $400 Euros total, or rent one) and spend a couple of days in
Ceský Krumlov. Literally among the prettiest, most quaint small town you'll ever find in Europe along with cities such as Colmar France or - Hallstatt, Austria.
But whatever you do, don't try to overdo it. "If it's Tuesday it must be..." Pick one or two at most locations and immerse.

What time of year OP? Assuming summer?
First time there?
I just got back from Italy Thanksgiving week and there’s just no way I’d suggest a first timer Europe trip to Italy in the summer. I’m sure I’ll get downvoted, but Italy is just dirty and crowded and hot in the summer.
Here’s what I like to recommend, one of two trips to get a lot of cultural/ country differences. People will say it’s a lot for 10 days for a first timer and it’s not a little, but it’s easily doable and you get to see a great variety. I personally prefer variety I just don’t like to do the same thing for 10 days.
Fly into London
Train to Paris
Train to Belgium
Train to Amsterdam, fly out
Fly to Munich
Train to Innsbruck
Train to Verona (on the train route and is a nice city with a colesseum, castle, and anything Italian you want)
Train to Venice (lot of Italy options from Verona it’s just on the way, but Venice is closest)
Fly out

No, that's the correct take. It's why I asked: "Are you flexible? Or committed to going in the summer?" If OP is going to go sometime June-Sept, then I would not recommend Spain or Italy.

Rome is hot but many parts of Italy are nice. And many parts of spain are nice in the summer. Barcelona, Pamplona and all of the Basque region are idea in July.

This depends on a lot of things. Mainly how you like to travel, budget, etc.
10 days ends up not being that much time, but when I finished college we never spent more than 2 nights somewhere. We hit most of the EU in 65 days. I would never travel like that in this stage of life.
What time of year?
If summer, I'd fly into Paris, do 1-2 days, speed train to hit south of france for 3 nights. Then get to Spain.
I love Spain. It's like the underrated Italy. You could do just 10 days in Spain (or any EU country for that matter). Madrid - Valencia - Cordoba - Seville - Malaga would be sweet.

1) loving all the Vienna props!
2) Southlake let me know but if you do Vienna i can give you tons of specific details/rec's as I lived there for a bit and go back most summers
3) I've likely been to many of the other cities/area across Europe and can give some rec's there too, was stationed in Stuttgart for three years and traveled a ton, My nephew just did a trip in the fall with his buddies and they loved Budapest and Vienna

Paris > TGV to Avignon. Rent a car and explore Provence.
Arles, Aix, Les Baux, St Remy, Gordes, L’isle Sur La Sorge, Marseille….and on and on. Incredible area. Wake up, and walk to the local bakery for fresh croissants and a baguette. Eat saucise and cheese with wine all day.
If I had the money(or a way to make it there) I’d live there in a heartbeat.

Go to London first. Stay in the Royal Imperial Windsor Hotel. Watch the traffic circles.
Then go to Paris. A lot of good can can dance shows but I would not bring the wife. Do not throw anything off the Eiffel Tower-I learned the hard way.
For us, Berlin was next. We saved some money by staying with some distant cousins. Local festivals are amazing, but be on your best behavior-Germans will fight at the drop of a hat.
We ended in Rome. Our rental car was stolen so we missed the Coliseum. However, we were generously compensated and greatly enjoyed all of the historical statues.
Then go to Paris. A lot of good can can dance shows but I would not bring the wife. Do not throw anything off the Eiffel Tower-I learned the hard way.
