Have never traveled abroad but want to start planning on. Would like to go to Italy.
Would like to go for 10ish days. I have a family of 3.
How much do I need to make this happen? I know this is vague but ball park answers will help.

Applying for credit card sign up bonuses will get you a lot of the way there. Capital One Venture X and/or Chase Sapphire Preferred are a good place to start while your plans are this open ended since they're so flexible.

7-10k is A LOT for a ten day trip to Italy for only 3 people. Can you spend that much? Absolutely. But that’s a pretty hefty budget.
A few years ago my wife and I went for 17 days and total cost excluding food/drinks was about $3,200. Could we have spent more and stayed at ritzier hotels? Sure. But the places we stayed were perfectly nice and we didn’t spend a ton of time in them anyway.

You will spend $2500 for plane and at least that much for lodging and food over 10 days. I would say the bare minimum would be $6,500 once you pay for in country travel, souvenirs and gifts, then activities. I highly recommend it though.

Correct. Biggest expense by far (for most, at least) will be the flights. Decent hotels in Europe are generally cheaper than in USA and certainly the case in Rome- around $50-100/night unless you get flagship American hotel, which adds $40 just for the name.
Edit: Thought this was 2 people, not 3. 7k is probably a reasonable prediction but shouldn't get up 10k unless you want to

We went for 17 days in country. It was tad under $8k. That included a few dollars lost due to covid changes. This included everything for 2 people. I think we could do it for a little less the second time around. I would think 6k for 3 people 10 days.

I don't know what kind of a shithole hostel you're staying in, but when we went to Italy 10 years ago, we didn't get a hotel anywhere in Italy for less than $300/night and these were not super ritzy hotels. The wife and I easily spent $7,000 for the 2 of us, so add in a third person and that's why I went as high as 10k.

We stayed at great airbnbs for around $150/night.

Then you didn't look at Hotels, hell I stayed at a 4* for 170 a night in Venice.
Really depends on how many visits they plan on bisiting and if they plan on driving to each vs flying.
Tickets RT right now are under 600 from New Orleans to Venice. So say he spends 700 a ticket for 3 people then he is looking at 2100 just for the plane. 10 days at around 200 a night would put him right at 4k for 10 days.
Depending on what he likes to do I found that eating out was not the expensive but I also didn't do any fine dining while in Italy. Mainly street foods, little cafes, etc... also pre-purchased all my tickets for museums and what not.
I spent more on souvenirs it seemed than I did on myself.

To do Italy right with a family, it will be somewhere between $6-8k if planned properly and far enough in advance.. Personally, I would not try to go super cheap when bringing my family along like I would have had I still been single/younger but everyone is different. Flights are cheap now for a reason but pre-pandemic, you could prob get a deal for around $1k or so if you watched the flight deal websites and set Google flight alerts.
Do you have passports? If not, get the process started now.

We just did a week in Italy for two for under $4k and that’s including a rental car for a week and air plane tickets. You could easily do it for $5-6k.

I agree. We did that several years ago in Rome and enjoyed being in a residential area away from the crowds but within walking distance of everything. However we were surprised on the day we checked out with the electricity bill the manager presented to us. It more than doubled the cost of the apartment. I would definitely rent an apartment or house again but be more aware of extra costs that may be hidden in the agreement. I think electricity charges are common in many countries.

I think a fair budget for 3 people, 10 days, with economy airfare, basic hotel accommodations, nothing extravagant for meals etc. could be ~$5k -$6K. Now, you can live like a student or live like a king, so obviously it'll vary.
To start with, get the Chase Sapphire Reserve Card and start charging everything on that. Just make sure you have the volume and don't carry huge balances. We paid for our daughter to join us in Europe recently with points. They can add up!
Second, consider going off season. We've been to Italy in December, January and it's not that cold. But the trade offs in avoiding crowds is huge and prices are much lower off season.
Looking at some recent "deals to Italy", Rome for example, it shows January-April being good months. $549-$605 per for economy. My assumption above is $700/per and that's to Rome. If you go to other locations like Florence it's likely to be higher.
This is from Nashville, but you get the gist.
I think for 3, a $100/night is reasonable. A question is are you going to put all 3 of you in the same room? Obviously impacts your costs. If you can find a place that includes breakfast then you shave off a few hundred. We've used VRBO and Booking.com in the past, and Chase has a site where you can use it to book with points if you had enough.
Obviously COVID looms as an unknown. I assumed in the #above ~$60/test to get home, assuming that's still a requirement. If you had to stay over because someone tested positive, then you could easily double that number (but it can be mitigated by looking into travel insurance, or better yet, our Chase Card had coverage if we had of gotten sick and had to stay over).

Tickets are usually a little cheaper for summer travel around February or March

Second that on the Capitol One Venture card. I used points for a savings of a grand on my trip.

Look at monastarystays.com
Stayed at a monastery in Rome. $197 for 5 nights. A/C, large, private bathroom, king bed, sofa. It was very clean, quiet, and short walk to train and many of the big attractions.
Went to Italy for 16 days, Santorini for 3, and Mykonos for 3 for less than $3000 all in.
It was glorious.

Let's say 12 days
Choose 3 cities max. You really don't want to do more than this in that timeframe.
Flights = $900 per person
Avg nightly rate for a room = $185 (x11)
Avg daily rate of food
(high estimate) = $75 per person per day
(low estimate) = $40
Train tickets, museums, etc = $800 per person
With a high estimate where you eat out every meal, and eat a full meal for every meal, I'd say 7k
If it was me as a solo traveler or with my wife, much lower because we shop AirBnB, usually keep rooms below $100, eat a pastry and coffee for breakfast, find cheaper flights because we have as much vacation days as we want....half of that, maybe $2500 solo and $4000 with my wife.
