Lots of beautiful roads in this thread, most of which I am familiar with but yet to traverse.
Sticking to roads I have driven, here are a few that may be under the radar:
1. Catalina Highway from Tucson to Mt Lemmon. In 30 miles you go from desert scrub to giant saguaros to ponderosa pines to aspens (six different ecosystems total). Several pullouts along the way with tremendous views of the city of Tucson, not to mention the unique rock formations and 100 mile views around every other turn for the first half of the drive.
too tired to post any others. some pretty cool roads in AZ and NM. wide open spaces, rocks, mountains, big skies.

Did the Million Dollar Highway on a motorcycle this summer. It is a must do if you are on a bike or in a car. Lots of wonderful roads in South Dakota too like Needles, Vanocker Canyon, Spearfish Canyon, Nemo and the Devils Tower highway is spectacular.

Drive the Oregon coast. Astoria to Brookings. As good as it gets...
