Sabroso's in Arroyo Seco, New Mexico. It's 10 mins out of Taos tucked away on short dirt road heading towards Taos Ski Valley. Food is delicious and the atmosphere is great in the evening.

Seriously, Peru and Mexico have the best cuisine in the Western Hemisphere outside of the United States.
Chifa Canton in Tarapoto, Peru.
Chifas are Chinese restaurants, but they have added Peruvian elements to their cuisine, and you should visit at least one if you go to Peru. If you think that "sweet and sour sauce" is something that comes out of a can, then you should get a dish at a place like Chifa Canton, where the sauce is a partial reduction of fresh jungle fruits.
El Mural de los Poblanos, Puebla, Mexico
Puebla is the birthplace of mole sauce, and you can get several outstanding varieties of it here. Or, in season, you can be rather brave and try the gusanos de maguey. If you choose the latter, they will bring the bowl of worms tableside while they are still wiggling, and the waiter will fill a big ladle with mezcal, light it on fire, and pour the flaming liquid over the worms to cook them in the bowl.
